Weekly Menu Round-Up: April 12-16

My final weeks of my undergraduate journey are coming to an end, so I need to stay fueled and care for myself to the best of my ability. So, my weekly menus have been filled with foods that I enjoy to keep me going! So, here we go with this week’s menu.

Monday

Living in New Jersey for sometime, I have become a major fan of Wegman’s prepared foods. So, I will be kicking off my week by enjoying the mega grocery store favorite of mine’s Sesame Chicken & Lo Mein along with some Spicy Tuna Rolls.

Tuesday

My air fryer has become my newest favorite cooking appliance. I have made practically everything in there and have discovered new treats, too. So, I will be trying Air Fryer Salmon and serving it with broccoli on the side.

Thursday

This Thursday, I will be enjoying another seafood favorite of mine – scallops! I will be making Dinner Then Dessert’s Crispy Baked Scallops recipe and serving it with some roasted Brussels sprouts and air fryer French fries.

I’m looking forward to staying fueled and enjoying my last weeks of college deliciously.

Healthy Eating Habits I Have Made In 2021

With a new year, well not so new anymore, comes new goals, habits, and achievements to be made. For 2021, I decided that I wanted to shift some of my not-so healthy eating habits and rather establish some healthy one’s. Here, I will be sharing with y’all some of those.

Drink or Dessert Rule

As much as I love a good glass of wine or even a cocktail, I also know that it adds up in calories. The same goes for desserts. So, the rule is to only have dessert or a drink in the evening’s. Well, unless the occasion is worth celebrating with both!

Vegetables Over Carbohydrates

In the past, I used to eat a ton of carbohydrate-consumed dishes, whether that be mashed potatoes, pasta, fries chips, or practically anything that is fried. Since vegetables are a lot lower in calories, I have decided to switch out my carbohydrates for vegetables, especially when it comes to side dishes. Although, I do make sure that I enjoy my favorite carbohydrate-loaded dishes in moderation!

Crystal Light Over Soda

This may sound crazy, but I drink Crystal Light’s low calorie caffeinated packets and mix them with water ALL. THE. TIME!!!! These drink packets are low in calories, but they also help me stay awake and fueled as I finish out my afternoons and evenings of schoolwork amongst everything else that I have going on. I have never been much of a soda person, but drinking Crystal Light’s packets has given me the feel that I am drinking an enjoyable flavored drink like soda.

Low-Calorie Snacks

I used to be a BIG snacker. However, I have strived in the recent months to be more careful with what I snack on. So, I have limited my snack intake and included more fruits and vegetables within my snacking mix. At the same time, I have been careful not to buy ice cream (a favorite of mine) as much along with other snack favorites of mine. However, I still do enjoy them all in moderation!

Use a Calorie Tracker

I will say that this DOES NOT WORK FOR EVERYONE!!!!! Personally, I have had some luck with using calorie trackers such as My Fitness Pal. I see tracking my calories as a way of helping me to eat a healthy amount of food each day. Additionally, I can see what my eating habits are and make the changes that I need to accordingly. Similarly, the My Fitness Pal website also has a ton of recipes that they share on their site amongst other ways to stay healthy.

Limit Sweet Treats

If I am around anything sweet, specifically cupcakes or chocolate, I will probably eat it. That being said, I do not buy anymore sweet treats. Well, not nearly as much as I used to. At the same time, I still find it important to enjoy and indulge in something sweet every once in a while!

One of my biggest priorities throughout 2021 is to make myself a priority. Through changing my eating habits, I have been able to work towards fulfilling that priority. Healthy eating habits will also help me moving forward in years to come, too!

Weekly Menu Round-Up: March 22-26

As I reach the home stretch of my college years, I am striving to stay healthy and fueled with my weekly menus. My final weeks of college will be filled with planning events, wrapping up research projects, and closing out my time at Meredith. So, I want to ensure that my body is fed well and remains healthy and fueled through it all, like with this week’s menu.

Fuel the Day Treat

To fuel my days, I will be enjoying brunch/lunch with avocado toast topped with sliced tomatoes and mozzarella or a fried egg.

Monday

To kick off the week, I am so excited to *FINALLY* be trying out air fryer salmon in my own kitchen! I plan to simply season it with some Himalayan salt and serve it with roasted broccoli and my favorite side dish – green bean casserole.

Tuesday

I have always been a lover of pizza!!! So, I will be putting my favorite dish to the test with a twist by serving a salami and pepperoni pizza on garlic naan. Garlic naan has become a favorite of mine, since I have fallen in love with the Indian food here in Raleigh! I will be serving my garlic naan pizza’s with my sautéed kale.

Wednesday

Being the seafood lover that I am, I am also super excited to try out a new tilapia recipe from Taste of HomeRed Pepper & Parmesan Tilapia. I will be serving this tilapia with some roasted sweet peppers.

Thursday

Ever since I was a little girl, like pizza, I have also had an obsession with pesto pasta. So, I will be enjoying this pasta favorite of mine in the form of gnocchi and adding some cherry tomatoes along with chopped mozzarella into the mix. On the side, I am going enjoy my Kale Caesar salad.

With my weeks getting busier than ever before during my Senior year of college, taking care of myself is more important than ever before.

How I Have Saved While Grocery Shopping

Groceries can be such a cash cow! Especially when we feel tempted to add different food items to our carts, grocery bills can easily rack up pretty fast. From my own experiences, I have spent a lot of unnecessary expenses on groceries. However, over time, I have saved my dollars on groceries, which has been a game changer for me! Today, I am sharing how I have saved while shopping for groceries.

Delivery/Pick Up Service

I have used Instacart since the pandemic began for my groceries. Through using Instacart, I have saved so much money on getting groceries. Although Instacart may appear as more expensive with the additional delivery, service, and tip fees, I have been able to actually save more. I have been known to be an impulse buyer, especially with items on sale or at a great price at the grocery store. With a delivery service such as Instacart, I have been able to choose the items that I need for the week and only the week. I have been able to use the ~$10 in fees to compensate for the lack of $15+ in impulse buys that aren’t used weekly. Services like Hello Fresh that pre-prepare your meals for you are also great ways to save and have your and your family’s meals ready at your doorstep.

No Name Brand Items

I strive to shop the generic brand items at the grocery store where I can. While I do have some name brand grocery items that I purchase regularly and will continue to do so, I buy mostly generic brand items. Some of the name brand grocery items that I will not turn back on include: Polly-O string cheese, Bai, Boboli pizza (a childhood favorite of mine), California Pizza Kitchen’s frozen Margherita pizza, Barefoot Wine, Bagel Bites, Fa!rlife Milk, and Crystal Light. We all have our own preferred name brand products, and definitely do not skimp on getting those if you enjoy them. On the same token, basic items such as flour, sugar, spices, pasta, and eggs can easily be bought from generic brands. I also switched my K-Cups from Starbucks to the generic store brands and have, in fact, liked the store brands better than the Starbucks brand; my wallet does too. Unless the product is something that tastes weird or does not do its job, then getting the generic brand is definitely the way to go!

Frozen Vegetables Over Fresh

My mother told me this snippet if advice a long while back, and I have sworn by it since! The snippet is to purchase frozen vegetables over fresh. You can heat up the frozen vegetables in the microwave and cook them, accordingly. The frozen veggies can also be healthier in a way, too. In fact, as someone who loves to roast vegetables, I have found the frozen veggies microwaved to taste just the same as the fresh. At the same time, I have also saved a bunch of time on cooking, as frozen vegetables come pre-chopped, especially when chopping recipes that require the dreaded chopping of the onion. Lastly, frozen vegetables can stay in your fridge for quit a while. The same can go for fruits, too!!!

Shop at Lidl and Aldi

Recently, I have discovered the beauty of Lidl and Aldi! Both stores have amazing deals on great food items. While not all items are not the best to get at Lidl and Aldi such as wine, there are some pretty great items and even name brand products at an extraordinary price. I have saved so much money by shopping at Lidl and Aldi, especially for staple items. The best way to check out Lidl and/or Aldi, is to check the aisles out for yourself! Trust me, you will spend a lot less on what you need plus/minus some!!!

Plan Your Meals!

Whether you use delivery services like Hello Fresh or primarily stock up at the grocery store, planning your meals are an effective way to save some money. My Aunt April told me this amazing tip that stuck with me for four years now – to limit your grocery store trips to once a week if that. Similarly, my Aunt April plans her meals for the week and my cousins’ snacks, so she only gets what she needs during her weekly grocery trips. Especially with using delivery services, shopping only once a week or every other week, I can save some cash on fees, too. That way, you can save your time AND money!!!

Go to Name Brand Stores and Wholesale Stores Once a Month/Few Months

Some of the name brand and wholesale grocery stores that I can think of, including Costco, Target, Wegman’s, Whole Foods, BJ’s, and Trader Joe’s, sell similar groceries at a much heftier price tag than others. Like many others, I love a fun trip to Wegman’s or Trader Joe’s for groceries, but it comes at a much heftier price tag than others. So, going to one of those grocery stores once each month or few months, will allow you to solely stock up on what you need/enjoy from there and save it for a given period of time. My mother goes to Costco once a month to get protein and snacks for the month, which saves her a bunch of money and our whole family and plans meals with each protein for the month, accordingly. That way, we can all save and buy less at the grocery store each week/every few weeks.

Grocery shopping can add up, especially really quickly. However, when you make a few changes to your shopping regime, then you are able to save a bunch of money on those hefty bills!!!

Weekly Menu Round-Up: March 8-11

With midterms and Spring Break approaching, it is a crazy time of the semester. That being said, it is time that I fuel up well with some foods that will help me stay strong to finish out my final semester’s midterms. This week’s menu is filled with some of my favorite recipes that are easy yet delicious.

Monday

I have been craving Mexican food, ever since last week, so I am enjoying some Mexican food this week – my favorite Mexican recipes to make in the kitchen. I am not the best at cooking Mexican food, so I have enjoyed Amy’s Brand microwavable enchiladas with nachos.

Tuesday

For Tuesday, I am going to enjoy another dish that I have been craving – salmon. So, I am trying a Chipotle Honey salmon from Food Lion and my favorite vegetable dish of roasted sweet peppers.

Wednesday

Indian food is my favorite type of cuisine! So, I am going to enjoy my favorite pizza dishes – a white garlic broccoli and a pesto pepperoni – on garlic naan. I am SO excited to try my favorite pizza’s on one of my favorite types of bread!

Thursday

Love me some pierogis!!!! This Thursday, I am finishing off the week with Polish beetroot soup that I picked up at a Polish Market in Pittsburgh when I visited 2 years ago and pierogis.

Weekly Menu Round-Up: March 1-5

As someone who loves a good menu, I am very excited about this week’s eats. This week’s menu consists of some recipes that have been family favorites in my Mom’s kitchen while growing up and also some that I have grown to love over the years. Everything for this week’s menu has been purchased from Aldi, and I have had such a fun time crafting it all!

Monday

So, tonight, I will be making my Mom’s Lemon Caper Salmon recipe with salmon filets and serving it with my favorite side dish of green bean casserole and roasted Brussels sprouts. To use the leftovers, I will be making a Lemon Caper Salmon Linguine Pasta and serving it with my new vegetable favorite of Sautéed Kale.

Tuesday

Another favorite of mine growing up has been crab cakes, so I will be enjoying some crab cakes with a side of roasted broccoli and a biscuit (and maybe a drizzle of Old Bay seasoning!).

Wednesday

Who doesn’t LOVE breakfast for dinner?! For Wednesday night, I will be making a fried egg over corned beef hash – a favorite of mine from my Papa’s and Grandma’s kitchen! In addition to my favorite breakfast recipe, I will also be having a good olde biscuit.

Thursday

Aldi has a wide variety of different raviolis, so I will be trying their spinach ravioli and having it with a buttery garlic parmesan sauce that I love to make (and is so so so easy to do!). On the side, I will be enjoying my favorite new Caesar salad twist – a kale Caesar salad!

Weekend

If you know me, then you know that I am a sucker for a delicious one pot recipe, so I will be making my Mom’s Dutch Oven Tuna Casserole recipe in my own kitchen. I could not be more excited to enjoy this few days-lasting casserole in my own apartment!!!

I am oh so excited to enjoy the many delicious kitchen favorites of mine in my own kitchen this week. A taste of home is always a great way to kick off the month of March!

So I Tried the Viral Tik Tok Baked Feta Pasta Recipe

The girl who is not on Tik Tok is now the girl who tries all of the Tik Tok trends! Although I am not an avid Tik Tok user, I am super into trying the social media trends and things that my friends discover on Tik Tok. When I came across the baked feta pasta recipe that went viral on there, I knew that I had to try it! Today, I have decided to share my experience trying this viral recipe, which, yes, leads up to its hype!

My friend Hannah and I tried this viral recipe for ourselves in my apartment. The recipe is extremely easy to make, so it makes for a great and easy recipe to make when you have had a busy day. It took 20 minutes maximum from start to finish. As for the ingredients, I added the following and purchased everything from Aldi:

  • Feta cheese (not a block)
  • Cherry tomatoes
  • Rotini pasta noodles (half a box)
  • Olive oil (drizzled)
  • Basil (sprinkled)

Overall, this recipe was amazing and super fun to make! One of my friends lives in a dorm and she said it is also dorm friendly! At the same time, this recipe is also extremely budget-friendly and can feed a crowd. Not only was it delicious, but it was also super healthy and you can make a lot with it (especially when you have a block of feta and use a whole box of pasta noodles). Yes, this recipe is definitely worth the hype!!!

Weekly Menu Round-Up: February 7-12

I have always loved cooking, especially since Covid-19 has called for us all to spend more time at home. Cooking has been one of the silver linings of this pandemic! With Valentine’s Day coming up, I am using this week as an opportunity to save while I can so I can host a nice dinner for Maggie and I this weekend. This week is very exciting, and I cannot wait to share all of my planned meals with y’all!

Sunday

Sunday funday!!!! To commemorate the Super Bowl, I will be making one of my favorite recipes – barbecue shrimp and serving it with Mac & cheese and cauliflower nuggets. Such a fun way to celebrate the Super Bowl, even if I don’t watch!

Monday

I am kicking this week with a bang and trying a shrimp fried rice package that I found at my local grocery store. It will be an easy to make recipe and served with my favorite vegetable dish – roasted broccoli and of course yum yum sauce!

Tuesday

Who doesn’t love breakfast for dinner?! This Tuesday, I will be enjoying a classic breakfast for dinner of scrambled eggs and a salmon cake that I picked up in a packet from Trader Joe’s. Something easy, yet delicious!

Thursday

Last week, I found this amazing-looking seafood mix at my local grocery store to be served with pasta. So, I can giving this delicious-looking mix a shot and serving it with angel hair pasta and some classic Texas toast – a childhood favorite of mine!!!

This week’s menu is simple yet delicious! Luckily, I have been able to easily use some of the groceries that I already have. Cheers to a great Valentine’s Week, although it will look different than the past!

Weekly Menu Round-Up: January 18-22

Love me a weekly menu! This week, although it is a short week, I wanted to try out some super delicious and fun recipes. The Spring 2021 semester has already been long and tiring, but I have always been a firm believer that a good recipe can make it all that much better.

Tuesday & Wednesday

Love me some pasta AND love me some seafood! Why not combine the two into the same dish?! This week, I am so excited to be trying a Shrimp Scampi Bake from Zona Cooks. I will be enjoying it both Tuesday and Wednesday with roasted broccoli on the side one night and roasted Brussels sprouts on the side the other.

Thursday

Growing up, my Aunt Amy used to make Chicken Marabella. Since my taste buds are not the biggest chicken fan anymore, I was so excited when I found this recipe from Lemony Thyme for Salmon Marbella. I will be serving it with couscous – a classic twist to this New York City native dish!

Weekend

This weekend, I am going to be trying a Blackened Shrimp Bowl recipe from Delish. I came across this recipe a while back as a lunch idea, and knew that I HAD TO TRY!!!

While short and sweet, I am extremely excited for all of the recipes that I will be trying and enjoying this week. Here’s to more delicious and fun memories being made in the kitchen!

Weekly Menu Round-Up: January 4-8

New year, new Weekly Menu Round-Up!!!! If you know me, then you know that I LOVE sharing my weekly menu round-up’s with y’all! With a new year in tow, I am OH SO EXCITED to start and share some brand-new recipes in my kitchen. Since I have been home since mid-November, I have missed whipping up some delights in my own kitchen, so I am extremely excited to get back into a new groove. Let’s get it going!!!

Monday

To kick off the week, I am going to be making none other than a classic recipe within my own kitchen of oven baked Old Bay Shrimp. I have grown up going to Bethany Beach and Annapolis where Old Bay Shrimp is a favorite, so I love making it on my own too. I will be serving this favorite dish of mine with my Grandma Anita’s green bean casserole recipe and roasted Brussels sprouts which are also two of my favorite’s to make!!!

Tuesday

Tuesday’s are reserved for a recipe favorite of mine that I have surprisingly only made at my Mom’s! This recipe is one that I discovered on Delish a few years ago right before I went home for break, and it is actually the first recipe that I made for my family: Tuscan Butter Salmon. It is so so so good and super easy and healthy! On the side, I will be serving it over plain couscous and a Caesar salad.

Wednesday

This Wednesday, I will be trying out a Healthy Baked Pesto Pasta Bake from Pinch of Yum and serving it with either leftover Caesar salad or a baguette.

Friday

I am feasting Friday! My obsession with Panera’s Broccoli Cheddar Soup has taken on a whole new meeting as I have discovered an easy copycat recipe from Shugary Sweets. This delicious soup discovery of mine will be served with homemade crab cakes from Once Upon a Chef and my favorite recipe of my own aka Roasted Broccoli.
