Weekly Menu Round Up: September 28-October 2

To be blatantly honest, I did not make ANY of the recipes that I had on this week’s menu. Reason being, I went to Trader Joe’s on Monday and totally got sidetracked from my list and decided to cook what looked amazing on the shelves, especially all of the Fall stuff. At the same time, I was craving Shrimp n’ Grits Wednesday evening, so I somehow managed to whip up a bunch of cheesy grits, which was an unexpected plus to this week’s menu! That being said, I do plan to make each of the items on last week’s menu again, plus a few more special dishes!

Monday: Pepperoni Pizza

Homemade pizza is a favorite of mine, especially in my kitchen! Last Monday, I picked up some pizza dough from Trader Joe’s, so I will be trying that. I will also be topping it off with some pepperoni, which is a childhood pizza topping favorite of mine! Fun fact: my mother used to have us make homemade pizza’s and I ALWAYS topped mine off with pepperoni. It’s most definitely a tradition in the kitchen that I want to pass onto my future children as well!

Tuesday: Pasta with Pumpkin Alfredo Sauce

Since Fall is *finally* here y’all (!!!), I will be making pasta with noodles in the shape of pumpkins brought to you by Trader Joe’s with a homemade Pumpkin Alfredo sauce from Delish, as listed in last week’s menu. Funny enough, I got SO sidetracked from my menu planning that I never picked up some pumpkin puree which is required for this recipe, so this week I promise I will! I will be serving my pasta with a Caesar salad, as I will be trying a new Vegan Caesar Salad Dressing from Trader Joe’s and a baguette with olive oil!

Wednesday: Butternut Squash Soup

Just like the Pumpkin Alfredo Sauce, I will also be making my Butternut Squash soup from Allrecipes this week. I am SO excited for this soup, as it is a favorite of mine! At the same time, I will be serving it with roasted carrots and my favorite side dish green bean casserole. To allow for some dipping in the soup and as an appetizer, I will also be serving my baguette toasted and with olive oil and rosemary as well!

Thursday: Leftover Butternut Squash Soup

I plan to cook a lot on Wednesday, which will minimize my cooking come Thursday. Also, Butternut Squash soup is a favorite of mine, so I am looking forward to having it a lot towards the end of this coming week!

Dessert: Pumpkin Cookies

Who doesn’t love the Pillsbury Pumpkin cookies?! I have a BUNCH in my fridge and I cannot wait to bake them! Fun fact: I suck at baking cookies, so Pillsbury will have to do!

I am SO looking forward to this week’s menu. Luckily, I have been able to keep it simple yet practical and delicious. Here’s to our first full week of Fall y’all!!!

Weekly Menu Round Up: September 21-25

To be blatantly honest, I have not been the best recently about planning my weekly menus. With everything going on with the coronavirus and the extreme uncertainty that sits atop all of us, it has been difficult for me to keep up. At the same time, I know that y’all love seeing my Weekly Menu Round Up posts. So, that all being said, I do and will continue to share my weekly menus, but they will be a lot more simplified. As always, I hope that my weekly menus provide you with some inspiration for your own kitchen!

Butternut Squash Soup

Butternut Squash soup has been a classic family favorite in my family’s household. Now that it is starting to feel like Fall #YAY, I wanted to make this favorite of mine in my own kitchen! I will be trying an easy recipe from AllRecipes. At the same time, I will be serving it with roasted vegetables, whatever I find at Trader Joe’s that looks appealing, and crostini’s.

Pumpkin Alfredo Pasta

It is most definitely Fall y’all in my kitchen! This week, I will be making a Pumpkin Alfredo sauce from Delish. As for the noodles, I will be using the pumpkin-shaped noodles from Trader Joe’s that I CANNOT wait to have back in my kitchen. I will be serving the pasta with Texas toast.

Pumpkin Cookies

The other week, I picked up some of the classic Pillsbury Pumpkin Cookies. I cannot wait to whip some up this weekend, as they are a favorite of mine!!!

8/24-8/28 Weekly Menu Round-Up

The other day when I was planning out this week’s menu, I shared that I think planning it has been the highlight of 2020. Ever since I was younger, I have become such a planner. That being said, I LOVE planning Weekly Menu’s and am really excited for this week’s. Just like last week’s, I have TONS of one pan/Crockpot recipes, as attending my Senior year mostly from Zoom is pretty hectic. Here’s to another crazy yet exciting *mainly virtual* week of Senior year!

Monday: Manicotti

Love me some Manicotti!!! Manicotti has been one of my favorite pasta dishes since I was younger. Last summer, I made a Crockpot Manicotti recipe that was AMAZING, however, it took two hours just to prep. That being said, I found this recipe from allrecipes that takes a lot less time to prep yet still has the same results! Similar to last week’s ravioli, I will be serving my Manicotti with some Caesar salad and Texas toast.

Tuesday: Slow Cooker Maple Salmon

Once I got to Meredith, my mom and I hit up a local Costco for some salmon, shrimp, and tilapia as we are fish lovers. As I have a ton of salmon in my freezer, I figured I would put it to some good use and try a super delicious looking Slow Cooker Maple Salmon from Get Crocked. I will be serving it with my favorite Thanksgiving dish that I make ALL the time – green bean casserole – along with some roasted broccoli.

Wednesday: Old Bay Shrimp

Ever since I was younger, I was OBSESSED with Old Bay Shrimp as well as *of course* all things Old Bay! I mean, I did grow up going to see my family in Annapolis, Maryland and visit the beaches in Delaware where my family has a beach house, which is where Old Bay seasoning flourishes. To complement the Old Bay Shrimp, I will be serving it with a baked potato and a Garlicky and Cheesy Cauliflower Broccoli Bake which looks AMAZING from Diethood.

Thursday: Popcorn Shrimp

Similarly to the Old Bay Shrimp, I have also always been obsessed with popcorn shrimp as I grew up eating it from the local Dairy Queen! Instead of making popcorn shrimp from scratch, I usually purchase it pre-made from Seapak. It definitely tastes similar to my favorite childhood dish from Dairy Queen. To serve alongside my popcorn shrimp, I will be having yet another baked potato as well as roasted carrots.

Friday: Crockpot Shrimp & Grits

Like salmon, I also have A TON of shrimp, so why not put it to some good use?! That being said, I will be testing out an easy Crockpot Shrimp & Grits recipe from Tammilee Tips. I will be serving it with roasted cherry tomatoes to celebrate the end of another long week!

I am MOST definitely excited for this week’s menu round-up, and I hope y’all are too! One of the biggest incentives for myself throughout crazy long weeks is to have an AMAZING dinner at the end of the day. It *for sure* keeps me going through it all, especially during these oh so crazy times.
