Weekly Menu Round-Up: March 22-26

As I reach the home stretch of my college years, I am striving to stay healthy and fueled with my weekly menus. My final weeks of college will be filled with planning events, wrapping up research projects, and closing out my time at Meredith. So, I want to ensure that my body is fed well and remains healthy and fueled through it all, like with this week’s menu.

Fuel the Day Treat

To fuel my days, I will be enjoying brunch/lunch with avocado toast topped with sliced tomatoes and mozzarella or a fried egg.

Monday

To kick off the week, I am so excited to *FINALLY* be trying out air fryer salmon in my own kitchen! I plan to simply season it with some Himalayan salt and serve it with roasted broccoli and my favorite side dish – green bean casserole.

Tuesday

I have always been a lover of pizza!!! So, I will be putting my favorite dish to the test with a twist by serving a salami and pepperoni pizza on garlic naan. Garlic naan has become a favorite of mine, since I have fallen in love with the Indian food here in Raleigh! I will be serving my garlic naan pizza’s with my sautéed kale.

Wednesday

Being the seafood lover that I am, I am also super excited to try out a new tilapia recipe from Taste of HomeRed Pepper & Parmesan Tilapia. I will be serving this tilapia with some roasted sweet peppers.

Thursday

Ever since I was a little girl, like pizza, I have also had an obsession with pesto pasta. So, I will be enjoying this pasta favorite of mine in the form of gnocchi and adding some cherry tomatoes along with chopped mozzarella into the mix. On the side, I am going enjoy my Kale Caesar salad.

With my weeks getting busier than ever before during my Senior year of college, taking care of myself is more important than ever before.

Weekly Menu Round-Up: March 1-5

As someone who loves a good menu, I am very excited about this week’s eats. This week’s menu consists of some recipes that have been family favorites in my Mom’s kitchen while growing up and also some that I have grown to love over the years. Everything for this week’s menu has been purchased from Aldi, and I have had such a fun time crafting it all!

Monday

So, tonight, I will be making my Mom’s Lemon Caper Salmon recipe with salmon filets and serving it with my favorite side dish of green bean casserole and roasted Brussels sprouts. To use the leftovers, I will be making a Lemon Caper Salmon Linguine Pasta and serving it with my new vegetable favorite of Sautéed Kale.

Tuesday

Another favorite of mine growing up has been crab cakes, so I will be enjoying some crab cakes with a side of roasted broccoli and a biscuit (and maybe a drizzle of Old Bay seasoning!).

Wednesday

Who doesn’t LOVE breakfast for dinner?! For Wednesday night, I will be making a fried egg over corned beef hash – a favorite of mine from my Papa’s and Grandma’s kitchen! In addition to my favorite breakfast recipe, I will also be having a good olde biscuit.

Thursday

Aldi has a wide variety of different raviolis, so I will be trying their spinach ravioli and having it with a buttery garlic parmesan sauce that I love to make (and is so so so easy to do!). On the side, I will be enjoying my favorite new Caesar salad twist – a kale Caesar salad!

Weekend

If you know me, then you know that I am a sucker for a delicious one pot recipe, so I will be making my Mom’s Dutch Oven Tuna Casserole recipe in my own kitchen. I could not be more excited to enjoy this few days-lasting casserole in my own apartment!!!

I am oh so excited to enjoy the many delicious kitchen favorites of mine in my own kitchen this week. A taste of home is always a great way to kick off the month of March!

So I Tried the Viral Tik Tok Baked Feta Pasta Recipe

The girl who is not on Tik Tok is now the girl who tries all of the Tik Tok trends! Although I am not an avid Tik Tok user, I am super into trying the social media trends and things that my friends discover on Tik Tok. When I came across the baked feta pasta recipe that went viral on there, I knew that I had to try it! Today, I have decided to share my experience trying this viral recipe, which, yes, leads up to its hype!

My friend Hannah and I tried this viral recipe for ourselves in my apartment. The recipe is extremely easy to make, so it makes for a great and easy recipe to make when you have had a busy day. It took 20 minutes maximum from start to finish. As for the ingredients, I added the following and purchased everything from Aldi:

  • Feta cheese (not a block)
  • Cherry tomatoes
  • Rotini pasta noodles (half a box)
  • Olive oil (drizzled)
  • Basil (sprinkled)

Overall, this recipe was amazing and super fun to make! One of my friends lives in a dorm and she said it is also dorm friendly! At the same time, this recipe is also extremely budget-friendly and can feed a crowd. Not only was it delicious, but it was also super healthy and you can make a lot with it (especially when you have a block of feta and use a whole box of pasta noodles). Yes, this recipe is definitely worth the hype!!!

The Easiest Roasted Broccoli Recipe

I have always been a lover of cooking, especially recipes that are easy to make yet still taste AMAZING! Ever since I got my college apartment last year, I began to want to try many new recipes. One of my favorites of them all has been my Roasted Broccoli – something that has now become a staple in my kitchen. Today, I will be sharing how YOU can can a try to making your own version of my long and behold Roasted Broccoli in your own kitchen!

Easy Roasted Broccoli

  • Ingredients:
    • Broccoli florets/broccoli bunch (chopped into florets)
    • Olive oil
    • Sea salt
    • Cooking spray
    • Any other spices/seasonings to your liking
  • Directions:
    • Preheat oven to 450 degrees
    • Spray pan with cooking spray
    • Wash broccoli & place it on the pan
    • Drizzle broccoli with olive oil and sprinkle sea salt and any other spices/seasonings to your liking
    • Place pan in the oven for 25 minutes
    • Enjoy!

The best part of my Roasted Broccoli recipe?! You can make it uniquely your own by adding the spices/seasonings that you LOVE! Here’s to many enjoyable times in the kitchen with a healthy and delicious recipe!!!

How To Craft A Weekly Menu On A Budget

From cooking to baking, the possibilities in the kitchen are most definitely ENDLESS! While it is extremely exciting to start cooking in the kitchen, it definitely comes at a cost. In order to help me stay on a budget, I create weekly menus that include ALL of the recipes that I have for a given week. That way, when I head on over to the grocery store, I know exactly what I am going to purchase for that week and it helps me steer away from items that I do not need. Consequentially, I have successfully been able to keep my grocery runs to once a week, which also helps me save money in the long run. In this blog post, I will be sharing how YOU can create your own weekly menu while maintaining your budget.

Use Pinterest, Blogs, & Cookbooks!

Have a preference for vegetarian, keto, gluten-free, or vegan recipes?! Whatever your recipe preferences may be, get on Pinterest and/or research some blogs and cookbooks that have recipes to your liking! In doing so, you can see what recipes are up to par with your cooking ability as well as your budget. In finding budget-friendly recipes, my biggest piece of advice would be to make sure that the majority of ingredients in the recipe you can either find in your pantry already or get pretty cheaply at the grocery store. For instance, you may not want to try a recipe that has you buy all of these ingredients that you do not already have in your pantry such as Worcester sauce and Nutmeg if you are not going to use them for something else. That being said, there are plenty of other recipes out there – even for the same dish – and it is much more worthwhile to spend your money on items that you will use to the fullest rather than dump. Finding inspiration for recipes is always an effective way to garner inspiration for what will be cooking in your kitchen!

Have A Place To Store Your Recipes Of Interest

Once you find a recipe that you would like to try, then save it to your Pinterest board, add a sticky note in a cookbook, or create a document where you can link recipes found directly from blogs. I have also created a Google Document where my friends and followers can all share recipes with one another and gather inspiration. If you would like to join, then fill out the form here! Having a place to store all of your recipes that you want to try will make it easier for you to find them, as you’re crafting your weekly menus. When you have found a plethora of recipes that you would like to try, then the opportunities to spice up your kitchen will be endless in a convenient way!

Plan Your Menu Based On What’s Going On Each Day

I cannot say this ENOUGH: plan your weekly menu based on what’s going on each day of the week. If your Monday evening is busy with meetings, then definitely plan for something simple that night or cook something the weekend before. The same idea goes for any other day of the week. Additionally, it is important to make note of days that you plan to go out to eat at restaurants and/or order takeout. In my family, we usually order takeout on Friday’s, so mark those days as having takeout for dinner. Similarly, if you plan to get breakfast, lunch, or dinner with some friends, then mark those on your menu calendar too. That way, when you plan your menu based on each day, you will be better set to create a menu that meets your day’s needs as well as your budget’s.

Shop Based On What’s On Sale!

What time is it?! It’s time to sign up for your favorite grocery stores’ rewards programs! Lucky for you, each of your favorite grocery stores will have coupons on items that are on sale for that week. Also, most grocery stores conveniently have apps that you can use to scan in these rewards when you go shopping and see what’s on sale before you go. Stores that have these reward program apps include Target, Harris Teeter, Food Lion, and Wegman’s. Excitedly enough, Instacart also has exclusive coupons to the app, which allows many of us who feel nervous about going grocery shopping in person to steal get our deals from our couch. That being said, my biggest suggestion would be to look at the items that your favorite grocery store is having a good deal on that week. If you see something that you enjoy that is on sale, then get it that week to save yourself some cash in the long run! You may even want to stock up if it will save you a lot of money in the long run to do so! Like clothing stores, grocery stores have sales too, however, they can be a lot more challenging to find – you just have to do your research.

Cook Ahead!

I have ALWAYS cooked more for dinner, so that I could just heat up something simple for lunch. I am also one that gets really hungry in between classes, so having something quick to heat up is great for me. Meal prep is also a great thing to do for dinners and/or lunches throughout the week. Not only does cooking ahead save you some time in the long run, but it also saves you money!

Get Groceries One Day a Week

Typically, I plan out my weekly menus the day of or two days before I head to the grocery store. Usually, I designate Sunday as my groceries day. That way, I know to have my Weekly Menu and Grocery List ready to go to get what I need for the week. In addition, I will normally know what meals I will be cooking for that week based on what is going on during the week – whether it be dinners out with friends, a gathering at someone’s apartment, or I have a hectic schedule that calls for some meal prepping. Whatever the case may be, having my grocery list set in stone and ready to go every Sunday helps me to get what I need to conquer my week and budget.

As someone who LOVES to cook while maintaining a budget, I hope that these tips will serve you well in the kitchen. Most importantly, cook meals that YOU and your roommates will each enjoy.
