Weekly Menu Round-Up: January 18-22

Love me a weekly menu! This week, although it is a short week, I wanted to try out some super delicious and fun recipes. The Spring 2021 semester has already been long and tiring, but I have always been a firm believer that a good recipe can make it all that much better.

Tuesday & Wednesday

Love me some pasta AND love me some seafood! Why not combine the two into the same dish?! This week, I am so excited to be trying a Shrimp Scampi Bake from Zona Cooks. I will be enjoying it both Tuesday and Wednesday with roasted broccoli on the side one night and roasted Brussels sprouts on the side the other.

Thursday

Growing up, my Aunt Amy used to make Chicken Marabella. Since my taste buds are not the biggest chicken fan anymore, I was so excited when I found this recipe from Lemony Thyme for Salmon Marbella. I will be serving it with couscous – a classic twist to this New York City native dish!

Weekend

This weekend, I am going to be trying a Blackened Shrimp Bowl recipe from Delish. I came across this recipe a while back as a lunch idea, and knew that I HAD TO TRY!!!

While short and sweet, I am extremely excited for all of the recipes that I will be trying and enjoying this week. Here’s to more delicious and fun memories being made in the kitchen!

Weekly Menu Round-Up: January 4-8

New year, new Weekly Menu Round-Up!!!! If you know me, then you know that I LOVE sharing my weekly menu round-up’s with y’all! With a new year in tow, I am OH SO EXCITED to start and share some brand-new recipes in my kitchen. Since I have been home since mid-November, I have missed whipping up some delights in my own kitchen, so I am extremely excited to get back into a new groove. Let’s get it going!!!

Monday

To kick off the week, I am going to be making none other than a classic recipe within my own kitchen of oven baked Old Bay Shrimp. I have grown up going to Bethany Beach and Annapolis where Old Bay Shrimp is a favorite, so I love making it on my own too. I will be serving this favorite dish of mine with my Grandma Anita’s green bean casserole recipe and roasted Brussels sprouts which are also two of my favorite’s to make!!!

Tuesday

Tuesday’s are reserved for a recipe favorite of mine that I have surprisingly only made at my Mom’s! This recipe is one that I discovered on Delish a few years ago right before I went home for break, and it is actually the first recipe that I made for my family: Tuscan Butter Salmon. It is so so so good and super easy and healthy! On the side, I will be serving it over plain couscous and a Caesar salad.

Wednesday

This Wednesday, I will be trying out a Healthy Baked Pesto Pasta Bake from Pinch of Yum and serving it with either leftover Caesar salad or a baguette.

Friday

I am feasting Friday! My obsession with Panera’s Broccoli Cheddar Soup has taken on a whole new meeting as I have discovered an easy copycat recipe from Shugary Sweets. This delicious soup discovery of mine will be served with homemade crab cakes from Once Upon a Chef and my favorite recipe of my own aka Roasted Broccoli.

Weekly Menu Round-Up: October 25-30

Life has definitely been crazy recently. After talking to a friend, I realized that making a good dinner can be a great way to get through the week. If you know me, you know that I love a good weekly menu. This week, I am cooking some recipes that are close to my heart from my childhood years and spicing them up to be an adulting edition. I am most definitely excited to enjoy some great recipes to keep me going throughout the week!

Sunday: Oven Baked Ziti

Every Christmas Eve, my Aunt Amy bakes a homemade oven baked ziti. Since I love my Aunt Amy’s recipe so much, I decided to find a variation of an oven baked ziti recipe to try myself. Aunt Amy’s recipe *HAS* to be saved solely for Christmas Eve!!! I found this dutch oven recipe from The Cookie Rookie, and it has been super popular recipe for a crowd (the pre-pandemic life). To go with it, I will be having a Caesar salad with a Vegan Salad Dressing from Trader Joe’s. I have yet to make it since the pandemic has taken over most of our lives, but I cannot wait to this week!

Monday: Honey Mustard Roasted Salmon

Love me some salmon!!! I have always been a sucker for salmon AND a Delish recipe. Experimenting with different salmon recipes has always been a favorite thing of mine to do. Monday, I will be trying a Honey Mustard Roasted Salmon from Delish and serving it with my favorite vegeatable dish: roasted Brussels sprouts. Definitely a great way to kick off the week.

Tuesday: BBQ Shrimp

I am obsessed with all things barbecue. At the same time, I am very weird about the meats that I eat, especially when cooking at home. So, when I found this BBQ Shrimp Recipe from $5 Dinners, I knew that I had to try! I made this recipe back in January for a few friends and in April for my family during quarantine, and am making it again and serving it with some Kraft Mac & Cheese and Roasted Broccoli. Definitely excited to have it again!

Wednesday: Breakfast

Confessions: I NEVER eat breakfast on a good day, so why not enjoy it for dinner?! Growing up, my Papa and Grandma made Corned Beef Hash, so I can going to make that along with an egg and probably some bacon. It will be an easy yet delicious dinner!!

Thursday: Pesto Pasta

Pesto pasta has been a childhood favorite of mine. My mother probably cooked it for me and my brother at least once a week! That being said, I will be enjoying my childhood favorite dish with some amazing roasted cherry tomatoes on the side. Like breakfast for dinner, it is an easy yet delicious recipe to make!

With the end of the Fall semester approaching, my life is about to get extremely crazy. I am glad that I have some super good recipes to look forward to all week.

Weekly Menu Round Up: September 28-October 2

To be blatantly honest, I did not make ANY of the recipes that I had on this week’s menu. Reason being, I went to Trader Joe’s on Monday and totally got sidetracked from my list and decided to cook what looked amazing on the shelves, especially all of the Fall stuff. At the same time, I was craving Shrimp n’ Grits Wednesday evening, so I somehow managed to whip up a bunch of cheesy grits, which was an unexpected plus to this week’s menu! That being said, I do plan to make each of the items on last week’s menu again, plus a few more special dishes!

Monday: Pepperoni Pizza

Homemade pizza is a favorite of mine, especially in my kitchen! Last Monday, I picked up some pizza dough from Trader Joe’s, so I will be trying that. I will also be topping it off with some pepperoni, which is a childhood pizza topping favorite of mine! Fun fact: my mother used to have us make homemade pizza’s and I ALWAYS topped mine off with pepperoni. It’s most definitely a tradition in the kitchen that I want to pass onto my future children as well!

Tuesday: Pasta with Pumpkin Alfredo Sauce

Since Fall is *finally* here y’all (!!!), I will be making pasta with noodles in the shape of pumpkins brought to you by Trader Joe’s with a homemade Pumpkin Alfredo sauce from Delish, as listed in last week’s menu. Funny enough, I got SO sidetracked from my menu planning that I never picked up some pumpkin puree which is required for this recipe, so this week I promise I will! I will be serving my pasta with a Caesar salad, as I will be trying a new Vegan Caesar Salad Dressing from Trader Joe’s and a baguette with olive oil!

Wednesday: Butternut Squash Soup

Just like the Pumpkin Alfredo Sauce, I will also be making my Butternut Squash soup from Allrecipes this week. I am SO excited for this soup, as it is a favorite of mine! At the same time, I will be serving it with roasted carrots and my favorite side dish green bean casserole. To allow for some dipping in the soup and as an appetizer, I will also be serving my baguette toasted and with olive oil and rosemary as well!

Thursday: Leftover Butternut Squash Soup

I plan to cook a lot on Wednesday, which will minimize my cooking come Thursday. Also, Butternut Squash soup is a favorite of mine, so I am looking forward to having it a lot towards the end of this coming week!

Dessert: Pumpkin Cookies

Who doesn’t love the Pillsbury Pumpkin cookies?! I have a BUNCH in my fridge and I cannot wait to bake them! Fun fact: I suck at baking cookies, so Pillsbury will have to do!

I am SO looking forward to this week’s menu. Luckily, I have been able to keep it simple yet practical and delicious. Here’s to our first full week of Fall y’all!!!

Weekly Menu Round Up: September 21-25

To be blatantly honest, I have not been the best recently about planning my weekly menus. With everything going on with the coronavirus and the extreme uncertainty that sits atop all of us, it has been difficult for me to keep up. At the same time, I know that y’all love seeing my Weekly Menu Round Up posts. So, that all being said, I do and will continue to share my weekly menus, but they will be a lot more simplified. As always, I hope that my weekly menus provide you with some inspiration for your own kitchen!

Butternut Squash Soup

Butternut Squash soup has been a classic family favorite in my family’s household. Now that it is starting to feel like Fall #YAY, I wanted to make this favorite of mine in my own kitchen! I will be trying an easy recipe from AllRecipes. At the same time, I will be serving it with roasted vegetables, whatever I find at Trader Joe’s that looks appealing, and crostini’s.

Pumpkin Alfredo Pasta

It is most definitely Fall y’all in my kitchen! This week, I will be making a Pumpkin Alfredo sauce from Delish. As for the noodles, I will be using the pumpkin-shaped noodles from Trader Joe’s that I CANNOT wait to have back in my kitchen. I will be serving the pasta with Texas toast.

Pumpkin Cookies

The other week, I picked up some of the classic Pillsbury Pumpkin Cookies. I cannot wait to whip some up this weekend, as they are a favorite of mine!!!

Weekly Menu Round-Up: September 7-11

Funny story: when looking at the dates for this week’s menu round-up, I had to check a few times before realizing that we’re approaching mid-September LOL! I’m very excited, as always, about this week’s menu, as I have some recipes that are staples in my kitchen. I’m definitely keeping it easy and simple, as many of these recipes contain ingredients that I either already have or can easily make. Like most of my platforms, I am currently in the process of transitioning to Fall as I am doing in my kitchen. As all of my Weekly Menu Round-Up’s, I hope that this week’s menu provides y’all with some inspiration for your own kitchens!

Monday – Skillet Gnocchi

In the Summer of 2019, my mother purchased an AMAZING skillet gnocchi from Costco. Flash forward to Summer 2020 and I found a similar skillet gnocchi pack from Costco and knew that I HAD to have it in my own kitchen! I will be whipping up this Costco favorite of mine and serving it with none other than my favorite staple salad of Caesar salad!

Tuesday – Boboli Pizza

My roommate Sophie always jokes that I make pizza ALL THE TIME. True story, too: I would make a pizza at least once a week in our apartment last year when she was around, and probably will when we’re living together in the Spring semester too. Boboli has been my staple brand for pizza crust ever since I was a little girl. For this week’s pizza, I will be adding prosciutto, mozzarella, spinach, minced garlic, and goat cheese. I made a pizza similar to this one in the summer months and I could not resist making it again!

Wednesday – Honey Garlic Glazed Salmon

Love me some salmon! I found this Honey Garlic Glazed Salmon from Delish and knew that I had to try it!!! To serve on the side, I will be making my favorite vegetable *fun fact* aka Brussels sprouts which will also be honey glazed using this recipe from Delish as well along with some mashed potatoes. Definitely some Fall feels on Wednesday!

Thursday – Shrimp Alfredo

Coincidentally, I shared this recipe on my Instagram stories (follow me @_thepinkchickadee) back in the summer months. Shrimp Alfredo is most definitely a favorite easy recipe of mine! I usually make it with egg noodles and add in some shrimp, cherry tomatoes, and maybe even some broccoli. While I typically make my Alfredo with shrimp, one can also make it with chicken or veggie style. The possibilities with this recipe are ENDLESS!

This week’s menu is definitely on the simple side, but it has some timeless dishes that have remained in my kitchen even since my childhood days. I have always found the kitchen to be a special place to try brand-new and classic recipes, making it such a special place to be. Have a great week y’all <3
