How To Craft A Weekly Menu On A Budget

From cooking to baking, the possibilities in the kitchen are most definitely ENDLESS! While it is extremely exciting to start cooking in the kitchen, it definitely comes at a cost. In order to help me stay on a budget, I create weekly menus that include ALL of the recipes that I have for a given week. That way, when I head on over to the grocery store, I know exactly what I am going to purchase for that week and it helps me steer away from items that I do not need. Consequentially, I have successfully been able to keep my grocery runs to once a week, which also helps me save money in the long run. In this blog post, I will be sharing how YOU can create your own weekly menu while maintaining your budget.

Use Pinterest, Blogs, & Cookbooks!

Have a preference for vegetarian, keto, gluten-free, or vegan recipes?! Whatever your recipe preferences may be, get on Pinterest and/or research some blogs and cookbooks that have recipes to your liking! In doing so, you can see what recipes are up to par with your cooking ability as well as your budget. In finding budget-friendly recipes, my biggest piece of advice would be to make sure that the majority of ingredients in the recipe you can either find in your pantry already or get pretty cheaply at the grocery store. For instance, you may not want to try a recipe that has you buy all of these ingredients that you do not already have in your pantry such as Worcester sauce and Nutmeg if you are not going to use them for something else. That being said, there are plenty of other recipes out there – even for the same dish – and it is much more worthwhile to spend your money on items that you will use to the fullest rather than dump. Finding inspiration for recipes is always an effective way to garner inspiration for what will be cooking in your kitchen!

Have A Place To Store Your Recipes Of Interest

Once you find a recipe that you would like to try, then save it to your Pinterest board, add a sticky note in a cookbook, or create a document where you can link recipes found directly from blogs. I have also created a Google Document where my friends and followers can all share recipes with one another and gather inspiration. If you would like to join, then fill out the form here! Having a place to store all of your recipes that you want to try will make it easier for you to find them, as you’re crafting your weekly menus. When you have found a plethora of recipes that you would like to try, then the opportunities to spice up your kitchen will be endless in a convenient way!

Plan Your Menu Based On What’s Going On Each Day

I cannot say this ENOUGH: plan your weekly menu based on what’s going on each day of the week. If your Monday evening is busy with meetings, then definitely plan for something simple that night or cook something the weekend before. The same idea goes for any other day of the week. Additionally, it is important to make note of days that you plan to go out to eat at restaurants and/or order takeout. In my family, we usually order takeout on Friday’s, so mark those days as having takeout for dinner. Similarly, if you plan to get breakfast, lunch, or dinner with some friends, then mark those on your menu calendar too. That way, when you plan your menu based on each day, you will be better set to create a menu that meets your day’s needs as well as your budget’s.

Shop Based On What’s On Sale!

What time is it?! It’s time to sign up for your favorite grocery stores’ rewards programs! Lucky for you, each of your favorite grocery stores will have coupons on items that are on sale for that week. Also, most grocery stores conveniently have apps that you can use to scan in these rewards when you go shopping and see what’s on sale before you go. Stores that have these reward program apps include Target, Harris Teeter, Food Lion, and Wegman’s. Excitedly enough, Instacart also has exclusive coupons to the app, which allows many of us who feel nervous about going grocery shopping in person to steal get our deals from our couch. That being said, my biggest suggestion would be to look at the items that your favorite grocery store is having a good deal on that week. If you see something that you enjoy that is on sale, then get it that week to save yourself some cash in the long run! You may even want to stock up if it will save you a lot of money in the long run to do so! Like clothing stores, grocery stores have sales too, however, they can be a lot more challenging to find – you just have to do your research.

Cook Ahead!

I have ALWAYS cooked more for dinner, so that I could just heat up something simple for lunch. I am also one that gets really hungry in between classes, so having something quick to heat up is great for me. Meal prep is also a great thing to do for dinners and/or lunches throughout the week. Not only does cooking ahead save you some time in the long run, but it also saves you money!

Get Groceries One Day a Week

Typically, I plan out my weekly menus the day of or two days before I head to the grocery store. Usually, I designate Sunday as my groceries day. That way, I know to have my Weekly Menu and Grocery List ready to go to get what I need for the week. In addition, I will normally know what meals I will be cooking for that week based on what is going on during the week – whether it be dinners out with friends, a gathering at someone’s apartment, or I have a hectic schedule that calls for some meal prepping. Whatever the case may be, having my grocery list set in stone and ready to go every Sunday helps me to get what I need to conquer my week and budget.

As someone who LOVES to cook while maintaining a budget, I hope that these tips will serve you well in the kitchen. Most importantly, cook meals that YOU and your roommates will each enjoy. Having fun and enjoying delicious meals together, no matter the cost, is the most important thing. Here’s to some delicious and budget-friendly meals to come!

15 Items I LOVE Having in my College Dorm/Apartment

With college move-in coming upon us quicker than ever, it definitely is exciting to make your lists and check them twice on what you need for your dorm/apartment. It definitely is daunting to be sure you have absolutely EVERYTHING that you need. Luckily, going away to college is not like packing your bags for a trip to Italy, as most likely there will be a Target nearby your college. As a college Senior, I have been through all of the ups and downs of packing and deciding what to bring to your new dorm/apartment. Throughout my time as a college student, I have figured out what products I LOVE having in my dorm/apartment, which I have listed 15 of them here!

1 – Bath & Body Works Wallflower

No one that I know likes a room that smells weird! Unfortunately, college dorms and even apartments can most definitely have strange odors from time to time. Luckily, Bath & Body Works’ Wallflowers are great to add a fresh scented aura to any small space. Upon moving into my Freshmen dorm, I purchased one of their plug-in Wallflowers, which can easily be refilled once every 4-8 weeks with a new scent. If you’re like me and you LOVE Bath & Body Works, then you know that they carry several super amazing scents from lotions to perfumes to soaps which of course are available for their Wallflower plug-in refills. Bath & Body Works’ Wallflowers have definitely been my favorite over the years, and I will definitely still be using them after college too!

2 – Throw Blanket

Nothing says I need to wind down better than cozying up with a throw blanket after a long day of classes. Over the years, I have LOVED having a throw blanket in my dorm/apartment. Not only does it make me feel really homey in my home away from home, but it also keeps me warm when the dorms/apartments are ridiculously cold (which they can be!).

3 – Cards Against Humanity

Cards Against Humanity has definitely been a classic card game amongst many adults of all ages, but especially college students. The majority of college-aged students that I know are big fans of Cards Against Humanity, which makes it an excellent social gathering. In fact, many college students host parties in their dorms/apartments just to play this awesome card game. That being said, it is definitely worth looking into purchasing a pack before you make the move to college.

4 – Fan

College dorms and even apartments are extremely weird with their heating and air systems at times. One day you may be living in a sauna and the next you may be living in what feels like an igloo. Keeping this fact in mind, I would definitely purchase a fan no matter the size before you go off to college, as you will have days where you need it. I sometimes even carry around mini battery-powered fans that I found for under $2 at Walmart during the Summer.

5 – Mugs

I feel that a persons’ mug collection tells a bunch about themselves and who they are. Mugs are such a fun way to have something that is uniquely yours while telling a bit about yourself. I know that I LOVE to collect mugs from my travels, as I have a few in my collection from when I studied abroad in Europe. Additionally, I also have a ton of mugs that are bright and bubbly with flamingoes and Lilly Pulitzer prints. Having a mug (or five) in your college dorm/apartment is a great way to tell a bit about yourself while also having something right in your own space that you can use to whip up your favorite morning drink.

6 – Air Purifier

Like any bedroom back at home, college dorms/apartments can get VERY dusty. Before I went to college, my mom invested in an air purifier for my dorm, and I am OH SO GRATEFUL that she did. Air purifiers are a lifesaver, as they simply purify the air in your dorm/apartment throughout the day – something that not all the dusting and mopping in the world can fully do.

7 – Fun Magnets

Like mugs, I LOVE to collect magnets from my travels! Magnets are just such a fun way to decorate your fridge or mini fridge with all your adventures from the years. Besides how fun they are, magnets are also extremely easy to transport and super duper affordable. That being said, one or even 20 magnets definitely will not hurt the budget and leave you with some super fun digs for your new fridge no matter its size.

8 – Vacuum

A vacuum has definitely been my saving grace during my college years! Having a vacuum has allowed me to keep my place clean and neat. Personally, I feel that this item is worth the investment for anybody moving into a college dorm/apartment without explaining too much!

9 – Decorative Banner

Bar carts, over the bed, and desk side, OH MY! The possibilities for where to hang a banner are ENDLESS. Decorative banners have always been a favorite of mine, as they are easy to transport as well as either make or order online. I have found that banners make for a fun nice touch in any place, especially one that you’re making into your second home.

10 – Anti-Wrinkle Spray

My step-mom bought me anti-wrinkle spray when I moved into my Freshmen year dorm, and it has definitely been one of the best things that she introduced me to! Anti-wrinkle spray is a simple and practical way to get rid of wrinkles in your clothes without having a use an iron. All you have to do is spray it on the garment where the wrinkles are, straighten out the wrinkles on the garment, and poof they are gone!

11 – Plates & Utensils

This one mostly goes for those living in a dorm, since having plates and utensils in an apartment is pretty much a necessity. When in a dorm, the dining hall food most definitely gets old, even after the first week. In my dorm, I most definitely made a ton of microwaveable dishes that required a plate and my own utensils. They were most definitely a lifesaver for me in my own dorm!

12 – Throw Pillows

Like a decorative banner, throw pillows definitely add a personal and fun spice to your dorm/apartment. I have found having throw pillows to make my dorm room extra homey while away from home too!

13 – Bar Cart

Whether for snacks or drinks, bar carts are definitely the way to go! I LOVE having a bar cart in my apartment, as I can successfully store all of the snacks and drinks that I enjoy throughout the days. The best part about a bar cart is that you can easily add a banner or frame and really make it your own. The possibilities are limitless with a bar cart!

14 – Coffee/Tea

Whether you love coffee or tea, I would definitely get a few of your favorite morning drink staples before heading off to college. Although I am an avid tea lover, I do know many people who LOVE coffee and have really benefitted from having their own Keurig. At the same time, the dining hall may only offer so much when it comes to coffee and tea and Starbucks/Dunkin’ adds up real fast. Whatever floats your boat in the morning when it comes to drinks is what you need to stay afloat throughout the crazy college days!

15 – Wall Art

Like a throw pillow, mug, throw blanket, or magnet, wall art is a telltale way to make a space specifically yours. While you may be moving into a space temporarily that many have lived before you and will live after you, having your own wall art sets your place apart from everyone else’s. Most importantly, wall art makes your space uniquely yours.

Even though college dorm/apartment can be hectic from time to time, it is also really exciting! While my list varies on categories of items that I cannot live without while away at college, each of these items has truly made me feel much more at home in my brand-new and temporary space. Hopefully, the items that I shared will provide you with some inspiration on what to get for your own college dorm/apartment as you make a new space your own too!

How To Get Involved in College During the Coronavirus Pandemic

Whether it be clubs, sports, social events, or all of the above, college life definitely has something for everybody. While it may seem daunting to choose what you may want to get involved in at college, there are several ways to get plugged into college life and figure out where your niche on campus is. For most of us, you will not find your niche of involvement right away, but you will find it. While the coronavirus pandemic may make it a bit harder to figure out what that niche maybe, it is still possible – you just have to think outside of the box. Today, I will be sharing how you can determine what YOU want to do to make your years in college the BEST that they can be even during the Covid-19 pandemic!

Do Your Research!

Before getting onto campus, look up clubs and organizations that may peek your interest. Most colleges and universities have a list of their clubs/organizations on their club website. I would most definitely look up that list and make note of which one’s you’re most interested in. In addition to looking up clubs/organizations that interest you on your college’s website, you can also see if the one’s that interest you have a social media page on Facebook or Instagram. Through doing so, you can most likely see photos of the club/organization’s membership body as well as the events that they do. Then, you can determine whether or not that club/organization is a good potential fit for you to get involved with. Moreover, I would also follow any club/organization’s social media pages, in order to receive updates on events. Whether they may be a club in your intended major, a religious group, a sorority, or an intramural sports team, or all of the above, knowing what clubs interest you will better help you to get plugged into college life.

Attend Club/Organization Fairs

While this may look a little different this Fall in the wake of the coronavirus pandemic, I would highly suggest attending any virtual activities that your college offers that allow you to learn more about student life. Although most of us are not sure what club/organization fairs will look like at colleges and universities across the country this Fall, the biggest piece of advice that I can give you is to follow clubs/organizations that seem interesting to you like previously mentioned. One of the best ways to become a part of a club/organization’s membership body is to simply message the club’s social media page to ask to join their potential email list. Club/organization’s email lists are great ways to find out about events, meetings, and fundraisers. With many colleges still doing plenty of events online, email lists are a great way to get reminders sent directly to you about all things going on on your campus, whether virtual and or in-person, especially for things that peek your interest!

Be OPEN!

Even though many aspects of college life may seem daunting or not of your interest, I advise you to remain open to the many possibilities that college life may bring. If your roommate invites you to an event that may not interest you at first, then STILL GO! While many things may not peek our interests at first, it does not mean that way may end up enjoying them and want to get plugged in even more. Staying open to the several opportunities that college brings is extremely important and helps us to grow into the strong, extraordinary people that we are to become in college and beyond. The possibilities in college are ENDLESS, SO GO FOR IT!

Get Out Of YOUR Comfort Zone!

My mother always tells me that the only way you get out of your comfort zone is when you grow. Indeed my mother is right! Want to attend an event virtually or in-person but don’t have anyone to go with?! GO by yourself! Interested in checking out a cafe or restaurant but all of your friends have plans?! GO anyways! Want to try out for a sports team or join a religious group but do not know anyone involved in them already?! DO it anyways! The possibilities are literally out of this world when we do things that make us uncomfortable. Getting out of our comfort zone is a nerve-racking feeling, especially on a virtual platform. However, once we do get out of our comfort zones we allow ourselves to grow and become who we are meant to be in the long run. Personally, I have found the times that were uncomfortable for myself to be the most rewarding times in my life. Guess what?! I wouldn’t be the person I am today if I had not gotten out of my comfort zone and tried new things, alone or not, and I know you will only become your best self if you do just the same.

Stick with What YOU Like

To set the ball straight: you WILL NOT fit in with every club/organization’s student body or interests on your campus and that IS OKAY! The best part of attending college is the diverse student bodies and vast amount of clubs/organizations and activities to do. The best piece of advice I can give you is to stick with what YOU LIKE! If the Book club interests you more than the French club, then focus your time on attending Book club meetings and getting to know your fellow club members. It may take some time, but you WILL find your niche. Simply stick with activities from clubs/organizations and school-wide events that suit your interest, and it will come to you along with likeminded classmates who may become some of your best friends and potentially lifelong friends.

Pandemic or not, college life is daunting! However, if you put in the time and effort to get to know others and yourself, you will truly find your niche. While it may take time to find your place on campus, just know that it IS there waiting for you when you are ready!

My Social Distancing-Friendly Beach Trip

Life is better at the beach, especially during a pandemic! With everything going on in the midst of the coronavirus pandemic, being at the beach was a great way to relax and still social distance. While travel may look different this year, especially overnight travel, it does not mean that we can’t still enjoy it. Today, I am going to be sharing my super fun and relaxing experience traveling overnight to Bethany Beach, Delaware on a social distanced beach trip.

Emphasis on Shopping Small

One of the most unique assets of Bethany Beach is the fact that the town only permits small businesses in its area. I find the plethora of small businesses there to make it such a special and down-to-earth traveling experience as well. I have always preferred local businesses when traveling to your typical chain restaurant, and Bethany Beach truly embraces shopping small! Some of my favorite restaurants in the area include: Shaka Shack, Off the Hook, Bethany Diner, The Salted Rim, Grotto Pizza, and Good Earth Market & Organic Farm. Meanwhile, Bonkey’s is definitely one of the best places to indulge in some ice cream. In terms of shops, Candy Kitchen is a super cute candy shop that pops up EVERYWHERE in the area, and my Aunt Sherri is obsessed with it! Besides Candy Kitchen, I have not shopped much in the area, the boardwalk has a lot of options for some t-shirts and souvenirs. The emphasis on small businesses in Bethany Beach makes me really appreciate the area, especially during the pandemic.

Beaches

Above it all, I have found the beaches to be one of the best places to social distance in Bethany Beach. The appeal of social distancing at the beach is that people always come in groups anyways and want to spread out, so pandemic or not it does not make a difference. In fact, I found myself to enjoy the beach more during a pandemic, as people are more likely to keep their distance from other groups, which means I have more space to spread out and sunbathe! Additionally, at Bethany Beach, there are police on the boardwalk and employees at booths to Delaware State Park’s beaches beyond the boardwalk to ensure that only a certain number of groups are on the beach at once. Knowing that people are looking out and ensuring that others are social distancing made me feel a lot more comfortable going to the beach.

Activities

Besides of course going to the beach, Bethany Beach has a lot to offer. Nearby Rehoboth Beach has a ton of outlet shops and a much longer boardwalk with lots of shops and restaurants as well, which I got to spend a day doing. At the same time, Bethany Beach offers mini golf and has arcades nearby, even though we didn’t go since it was crowded. As for outdoor activities and sports, Bethany Beach has many gorgeous and scenic trails and walking paths as well as a brand-new park right by its boardwalk. Many people also bike around the boardwalk area too, which I love to see!

Getting to go to Bethany Beach this summer was such a treat and it was even more fun to do with my family to get that time with them. Bethany Beach has such a strong family-friendly and down to earth atmosphere that made me LOVE it as a sweet beach town. Personally, I always feel that a beach trip is needed at least once a summer, and this summer it was needed more than ever.

DIY Monogrammed Lilly Pulitzer Notebooks

Hey y’all! As a new school year approaches, it just may be time to upgrade your typical notebook to start it off fashionably strong. This past semester, I decided to spice up my notebooks with my own preppy twist that I wanted to share it with y’all!

Materials

  • 1-5 subject spiral notebook (I usually buy mine at the cheapest price from either Walmart or Target)
  • Modge Podge (I got mine from the Dollar Tree)
  • A computer with Microsoft Word

Directions

  • Look up your favorite Lilly Pulitzer prints online and add them into a Microsoft Word or Google Docs document and create a collage out of the prints online the size of a page or one print per page (whatever your liking may be!). I decided to use Postcards From Positano, Peel N’ Eat, Hangin’ Around, & Who Let The Fronds Out.
  • Add a text box into an existing document and place it over each printed page (or create text boxes in a new document if using old planner pages). Proceed to type your information in the text box and customize the font and size of the font to your liking.
  • Print the pages and prepare each page to place on each notebook.
  • Using modge podge, seal each page onto its corresponding notebook.
  • Place each monogrammed decal on each notebook; I purchased mine from a classmate of mine Destiny Eudy). However, there are many great deals on Etsy too!

How I Juggle College Life!

The socials, the hangouts, the study sessions, the meetings, the positions, the classes, and even jobs, OH MY! College is an exciting time, yet it can be one of the craziest most robust times of our lives as well. Most of us, like myself, are typically balancing a lot of various commitments and activities each day. Life at college is fun but it can also be extremely stressful if not properly managed. With the school year approaching us, I am going to be sharing how I juggle college life and the many things that I do on a regular basis.

Planners Are Your BEST FRIEND!

Establishing some sort of planning system is definitely going to help you to stay on top of everything that is going on. I have used both paperback planners, like those from Lilly Pulitzer and Erin Condren, and Digital planners through Google Calendar and Apple’s Calendar. Over time, I have come to prefer having everything on a digital front, as I have been one to forget to write everything down in my paperback calendar after the first week of classes *not gonna lie*! However, I do know that paperback planners are best for others and that is great. The most important thing is that you find the planning system that is BEST FOR YOU! Once you do, make it apart of your daily ritual!

To-Do Lists Will Become Your Best Friend As Well!

Along with having a planner, creating a to-do list is an excellent way to ensure that you conquer that many things that you have to do on the daily in your college life. I put things as simple as putting together a grocery list for the week to things for my blogging platform to things as complex as a Programming project or studying for a test. It helps me to break everything down into what I need to do each day or over the weekend. For instance, if I have a big test on a Wednesday, then I may write on my to-do list the week before and the Monday and Tuesday the week of to take some time and study for that test. The same idea of breaking to-do list entries down goes to a big project, paper, or even a homework assignment. Having everything together on one list helps me to conquer all of the things that I have to do, and I know it will help y’all too!

Use Syllabus Week as Planning Week!

Although syllabus week may feel like a major treat in the college world, it does not does any of us any justice to simply attend class and use the afternoon as a time to do anything but focus on our new courses. Typically, college syllabi come with a calendar of important dates to remember for your courses – test dates, project due dates, assignment due dates, etc. Once you have those dates in hand, I would highly suggest breaking out your planners and to-do lists and writing everything down. Come up with your plan for how you will complete each of the tasks that come with your classes the moment you get that syllabus.

At the same time, as someone who is involved in clubs and organizations as well as my school’s events, I always jot down the important dates that I need to remember for these commitments along with my academic one’s. Usually, clubs and organizations will either send out their meeting dates via email or have it posted somewhere online like a school website. Like a syllabus, I would write down all of the dates that you are committed to attending a meeting or event. If you have anything that you know you need to do before any of those commitments, then I would add them to your to-do list. Social commitments are just as important as the academic commitments in the college world, as both shape us into the people that we are and will become. Being able to complete tasks in both our academic and social worlds will help us to be well-rounded college graduates going into the real world in the years to come.

Things WILL Pop Up Last Second and That’s OKAY

While we can always plan to the best of our abilities, nothing will ever go perfectly as we anticipated. You may have a social outing or meeting last longer than you anticipated and that is OKAY. You may have an assignment simply creep up on you and that is OKAY. You may have something pop up with your friend or roommate that you need to tend to and that is OKAY. You may just need an evening for yourself and that is OKAY. Even though it may feel like a pain when things creep up on us that we do not expect, remember that it happens to the best of us. The most important thing is that you are trying your best to do all that you can do to juggle it all. Remember that all of us have our days and that is OKAY. We are ALL human.

Leave Time for YOU

While our college lives seem to leave us with time for everything but ourselves at times, it is always important to set some time aside each day for ourselves. Without that time, we will not be able to be our best selves. In fact, putting in time each day to simply wind down or do something that we enjoy that isn’t related to anything in our college lives helps us to be the best that we can be in our college lives. Most importantly, setting time for you helps you to be the best version of yourself in everything that you do!

College is a journey leading to the destination of acquiring a degree. While the classes, assignments, social activities, and everything in between can feel like a craze at times, remember to take time to enjoy where you are at. As a Senior in college, it feels like yesterday that I began my college journey. College will not last forever and nothing ever does, so enjoy the moments along the way. Enjoy the times that you have getting ice cream or dinner with friends. Enjoy the late nights that you and your roommate(s) spend studying and cramming for tests. Enjoy the many t-shirt sales at your fingertips and take advantage of every club or class fundraiser that you want to support *money allowing*. Enjoy the times in class that you spend with those in your major or even those not in your major and get to know your classmates in all of your classes. Enjoy the times in class and in meetings that may just overwhelm you. Most of all, make the best of your college experience and the little things in between it all – they are truly what makes college oh so special!

Why I Chose My Math Major

“You don’t seem like a math major” – a reaction that I ALWAYS get when I tell people that I am one. That is, besides the typical “gosh, math is hard – that was my worst subject!” Yes, math is a super hard subject, and I never envisioned myself choosing math as my major, especially if I were to look back at my high school years. However, choosing a major is definitely an extremely challenging decision to make and it wasn’t any different for myself. Every person, no matter their gender, has their own unique experience into deciding on their own college major and/or career trajectory. Since sharing other women’s stories on why they chose their majors, I figured that I would share my own story, as it is was a journey in itself to get to where I am today and where I plan to go career-wise moving forward.

My High School Years

Once upon a time, there was a fifteen year old Katie anxiously awaiting for her first class of the first day of her Sophomore year of high school to start. Her first class was none other than Fashion Marketing – the class that she was most excited for that year. In fact, that class was the one class that I would hope would help define my career path, as I have always LOVED fashion. That same week that classes started, my mother and I traveled to New York City during Mercedes Benz Fashion Week where we got to see the magic before our eyes of New York Fashion Week. I even got to walk the runway and fulfill my dream of doing so at Zappo’s popup runway booth right by Lincoln Center! In the classroom, as my Sophomore year progressed in Fashion Marketing, I became even more passionate about the fashion industry. I got to design my own garment out of a trash bag and tote bag out of Target shopping bags which were both super fun and also take a trip with other Fashion Marketing students all across my school district to Virginia Commonwealth University (VCU) in Richmond, Virginia to learn more about their fashion program and alumni’s career paths from their Fashion programs. We also watched a documentary on Vogue magazine’s iconic Editor-In-Chief Anna Wintour as well as The Devil Wears Prada, which is written by one of Wintour’s former assistant’s. My experiences in that course made me ecstatic to start my own career in fashion someday.

The summer before my Junior year of high school, I started to tour colleges. Since I was very optimistic about starting a career in fashion, my mom took me to many colleges with a fashion program. At one of the schools, we were lucky enough to get to meet with a professor in their Fashion Department. While meeting with the professor, she shared with us some of the jobs that alumni of their Fashion Merchandising program were getting. Although those jobs may have been a perfect fit for someone else, I knew in that moment that they were not for me. Leaving that meeting, I felt very disappointed as I had always dreamed of working in the fashion industry – it appeared so glamorous so fun. Though I knew this new reality, I did not want to give up my dreams of working in fashion, so I became in denial with what I had just faced.

Flash-forward to the Fall of my Junior year of high school, and I had decided to tour two schools in New York to check out their fashion programs. Going to school in New York City was then nothing but a dream that I wanted to come true for myself. I had grown up watching movies that took place in New York City, such as Eloise at the Plaza and of course Sex In the City. The city looked nothing short of glamorous and what I thought at the time was the most perfect place for me to attend college. When I toured both of the schools, I fell in love with one of them outside of the city, while I did not like to one at all inside of Manhattan. I was most definitely sad that I did not like the school that I toured in Manhattan, but it was also another tall-telling sign that fashion may not have been the degree for me.

As my Junior year of high school progressed, I began to question whether or not I would study fashion. Moreover, I started to think about studying Textiles Management or Cosmetic Chemistry, even though I had 0% interest in chemistry or any sciences for that matter. I also thought about Event Planning for sometime too. However, it was not until my mother mentioned Data Analytics and Statistics to me at the end of my Junior year that I finally realized I may have found a good career fit for me. As I finished out high school, I still was not so sure as to what I wanted to study but I thought I would give Math and/or Statistics a shot!

Early College Years

Let’s take it back a minute to the summer before my Freshmen year of college. That summer, I went on a graduation trip with my mother to Sofia, Bulgaria for a special education conference with her and her colleagues. One of her colleagues’ husbands came along with us to Bulgaria and he was a Computer Science major. He talked so highly of his job and career path using analytics through studying Computer Science. His excitement towards his college major made me want to pursue a degree in Computer Science. On the contrary, I had NEVER tried programming before my first class my Spring semester of my Freshmen year of college and let’s just say it did not come easy to me. That being said, I decided not to major in Computer Science and look towards something else.

When I was struggling in my first-ever Programming course, I was telling some of my friends and classmates about how I was trying to decide on a different major. Most of them told me that they all saw me as a Fashion major. At the same time, my mom told me to look into Meredith’s Fashion program, as I knew that they had one and it was good too. Following those around me’s suggestions, I looked into Meredith’s Fashion Merchandising Program and registered for a few fashion courses for my Sophomore year. At the same time, I decided to continue to pursue a minor in Math, since I knew I could get the credits to do so and it would look good to have a STEM minor, especially when standing out in the fashion industry. I finally felt as if I was on a career path that was my own, despite having a reeking gut feeling that fashion STILL wasn’t right for me.

The Fall semester of my Sophomore year, I was really excited to finally be in my first-ever fashion classes since high school. The first few days of classes went great until I started to realize that the program was geared towards gearing students up for a career path that just was not for me. In that moment, I FINALLY knew then and there that fashion was not for me. It was definitely a hard pill to swallow but an important one.

Fortunately, at the same time, I was continuing to take Math courses to progress in a Math degree. Let’s just say that I am OH SO THANKFUL that I continued to take them. While I definitely did not enjoy the Math classes that I took that semester and it made me really contemplate my major after that Fall semester, I am really glad that I stuck with it. As the Spring semester approached, I debated about declaring a Marketing or Event Planning degree and finishing out my minor in Math. I met with professors from the Business Department as well as my now-advisor in the Math and Computer Science Department to aide me in my *major* decision.

At the same time that I was stressing over my major, I did not feel as if I had the potential to be a Math major or even fit in with my department. Even though I did enjoy the girls in my department and we all really cared and still care very much for one another, I did not know or feel as if I fit in. I was really into fashion and planning events and going out and being social while most of them most definitely did not have all of those interests to my extent. My differing persona made me wonder if I would fit in in a different program with people that I felt as if I identified with more.

Besides feeling as if I did not have a place in my department, I also felt that I lacked potential in my degree. I’m going to put it out there: Math is HARD for a lot of people, including Math majors! My Math classes definitely were not easy, and I knew that it came more naturally to some of my classmates more than myself, which made me worry that I was not good enough or have any potential in my program. At first, I did not want to work hard in a subject that did not come as easy to me like it did to others, especially feeling as if I did not belong amongst my classmates. However, I decided to keep trying and to help my classmates out along the way. I made study guides and planned study sessions with some of them, and let’s just say that it not only helped me feel connected and if I had potential in my program but it also helped my classmates feel the same way. I also realized that I was not the only one who did not have their coursework come easy to me, which made me feel real reassured.

Declaring My Major

One of the really tell-tale moments for me when choosing my major is when one of my friends Jess told a staff member in the Career Center about how analytical my thinking is. It made me realize that I did have assets beyond creating study guides and hosting study sessions. Jess also helped me realize in that moment that I DO and DID have potential in my major and that I BELONGED in my department. Another moment for me is when I told my friend Ava that I was going to stick with my major in Math after debating for months and her response was an astounding “GOOD!”. After declaring my Math major, my friend Sydney and I cried happy tears as we celebrated. But, most importantly, Jess said to me “you belong here.” That is when I knew that I had found the right program and major for me.

Since declaring my major in Math, my friends in my department and I took some pictures to celebrate with one of our favorite hashtags: #MeredithMath. So many of my friends in my department showed up, which made me realize that I DID BELONG and that I DO have an excellent department full of incredible, strong, and empowering women. Their ongoing support has led me to take on the role as the Canaday Math and Computer Science Club’s President for my upcoming Senior year. My department has been growing both in diversity and in community. They say that empowered women empower one another, and indeed, they do!

Travel Guide: Seeing Washington, DC On a Budget

Growing up right outside of the nation’s capital was something that I unfortunately took for granted until I moved to Raleigh for college. However, after hearing many of my college friends and classmates share with me how much they wished they could be able to live outside of the nation’s largest cities, I knew how lucky I truly was! Having lived right outside of Washington, DC, I have been very fortunate enough to be able to go into the city just for a day and take in some of the city’s many sights. Since starting college, I have had a few friends come to visit me in my hometown over the years, with multiple trips into Washington, DC. On each of these trips, I have been able to budget accordingly to allow for my friends and I to have an enjoyable experience while not spending a lot of money. Personally, I think that Washington, DC is an extremely affordable city to visit, especially with all that it has to offer. Today, I will be sharing the tips and ways that I use when visiting Washington, DC.

1 – The Smithsonian Museums are FREE

You heard that right – all of the Smithsonian Institution museums are FREE! Guess what?! There are a total of 11 museums that are a part of the Smithsonian Institution just on the National Mall. That means that there are tons of spectacular things to learn and see at your fingertips at no cost to you. The museums pretty much line up both sides of the National Mall, and they could easily take months just for you to see everything within each of them. Luckily, there will be a museum for everybody to enjoy, as the museums on the National Mall include the National Museum of African American History and Culture, National Air and Space Museum, National Museum of American History, National Museum of the American Indian, and the National Portrait Gallery. While spending some time museum hopping, you can also snap a few pictures at the Renwick Gallery with their extraordinary art collections, the Smithsonian Gardens, and the Hirshhorn Sculpture Gardens. If you get tired of museum hopping, then you can always go right outside and enjoy spectacular views of the city’s monuments or head on over to the National Zoo, which is also a part of the Smithsonian Institution and FREE. The Smithsonian Institution’s plethora of museum offerings the don’t even cost a penny to any of its visitors leaves it such a great, budget-friendly asset for Washington, DC.

Some of my favorite exhibits & museums include:

  • The Freer Gallery of Art – it primarily showcases Asian art pieces; it’s such a hidden gem!
  • The Wizard of Oz‘s Dorothy’s Red Slippers at the Museum of American History – I think this was from the Movie/Film/Pop Culture Exhibit, and it was such a cool piece of cinematic history to see!
  • National Gallery of Art – they have pretty much all of the famous artists, from Vincent Van Gogh to Claude Monet.
  • The Hope Diamond at the Museum of Natural History – definitely a favorite of mine, along with the many other gemstones on display nearby.
  • National Museum of African American History – I found this museum to be such an incredible place to highlight the extraordinary works of African American advocates over the years. Moreover, this museum places an emphasis on the struggles that African Americans have faced in America for centuries in their ongoing fight for equal rights.
  • The Planetarium at the National Air and Space Museum – I went as a kid and LOVED it!! I highly recommend for people of all ages.
  • First Ladies/Presidents Exhibit at the Museum of American History – if you love fashion, then this one is for you! Former First Lady Helen Taft created the First Ladies collection at the Smithsonian to preserve the First Ladies’ inaugural gowns, many of which are still on display.
  • The National Archives – you can see the official copy of the Declaration of Independence and the Constitution!

2 – Be Your Own Guide: See the Monuments Yourself

Ever log onto a site such as TripAdvisor and search for a guided sightseeing tour?! While a guided sightseeing tour is always convenient when in a new city, I highly recommend seeing the monuments on your own in Washington, DC, especially on a budget. Fortunately, the monuments are within close proximity to one another that they are usually within walking distance. The Washington Monument and United States Capital Building line the National Mall on both sides with each being closer to several of the nation’s monuments. Right by the Washington Monument is the Lincoln Memorial and World War 11 Memorial as well as the Constitution Gardens Pond, which is absolutely gorgeous and makes for a stunning photo opportunity. Meanwhile, the United States Capital Building is right by the Library of Congress and the United States Supreme Court Building. The White House, on the other hand, is a nice walk from the National Mall. Not only will you get to see all of Washington, DC’s iconic monuments for free, but you will also get to explore a lot of the city’s streets and see its timeless, historic charm.

3 – Tours of Many Monuments are FREE

YES, the Smithsonian Institution is not the only place in Washington, DC that offers sights for free to its visitors. The Washington Monument is also free to guests as well, that is, as long as you line up outside of the ticket office starting at either 7am or 8am to get your tickets the day of. The same also goes for the Library of Congress, the White House, and the United States Capital Building, even though for those you do typically need to get a Congressmen’s approval to visit, through submitting a tour request. If you do choose to tour either the Library of Congress, the White House, and the United States Capital Building or all of them, I would highly suggest looking up your representative and their tour request form and submitting it months in advance to reserve your spot, since tickets are on a first-come first-served basis. I have done the Washington Monument tour, and I highly recommend it, as you get great skyline views of the city, and the monument keeps the number of people in it at a time at a small capacity. That all being said, Washington, DC definitely has a ton of iconic sites that you can see FOR FREE!

4 – Take Metro EVERYWHERE

I cannot stress this one enough!! If you do not know already, the Metro is essentially Washington, DC’s subway transit and bus system. It is also easy to use and navigate once you get the hang of it and a whole lot cheaper than calling an Uber everywhere you go. Additionally, using public transportation is super environmentally-friendly. While taking Metro, you’ll be saving yourself some cash and helping the planet in the long run!

5 – Eat Most Meals at Cafes or Local Joints

I most definitely recommend this when in any city! Right along the National Mall, there are several food trucks at various price ranges available to visitors. I would highly recommend taking advantage of these food trucks while spending a day at the Smithsonian/on the National Mall. Besides food trucks, Washington, DC has several budget-friendly cafes and local joints. One of my favorites is Lincoln’s Waffle Shop as well as Cosi and Le Pain Quotidien. Another great restaurant to hit up, although a bit pricey for fast food, is Shake Shack – their burgers are up to par with In-N-Out Burger and are TO DIE FOR GOOD! While you can easily splurge on food in Washington, DC, there are many ways that you can save while still eating just as good if not even better!

6 – Reserve in Advance

As previously mentioned with the White House, United States Capital Building, and the Library of Congress, reserving in advance is most definitely the way to go. Washington, DC is a world-renowned tourist destination, so millions of people visit each year and want to see all of the sights that the city has to offer. While many activities are offered for free here in DC, places like the Madame Tussands Was Museum, International Spy Museum, and the National Museum of Women in the Arts come at a minimal cost. Performances at the Kennedy Center or Fords Theatre will cost you some dollar as well. Along with assuring that you have a spot in any activity or tour that you want to do while visiting, you also will probably save a bit of cash as prices are typically lower the earlier that you book. Not only will you be guaranteeing yourself a spot on the must-see activity of your dreams, but you will also probably be saving yourself some cash too. 

7 – Stay in an AirBNB or Budget-Friendly Hotel

Even though I have a home to stay at when I come to Washington, DC, I do know that there are several places to stay on the budget-friendly side. Whether going with one or many of your crew, AirBNB is a great option to look into, as you and your crew can usually find a nice place to stay and potentially get your own rooms at a steal of the cost for a hotel. If you choose AirBNB, then I would highly recommend only booking through hosts that are SuperHosts, meaning that they have been highly rated for their AirBNB’(s) that you would be staying at. If you prefer not to stay at an AirBNB, then there is always the option of a hotel. When searching for a budget-friendly hotel, you may have to sacrifice location downtown for something potentially on the Metro line in Virginia or Maryland or not near all of the sites in DC. I would try a site like Hotels.com to look for hotels on a budget. Wherever you choose to stay, just ensure that it is a safe place and READ THE REVIEWS!! 

Overall, I have found Washington, DC to be an extremely budget-friendly city to travel to for families and friends alike. One of the biggest assets of this city is the vast amount of things to do that are FREE. While Washington, DC is a city that I am extremely knowledgable on due to it being in my backyard, it does not mean that you cannot use some of these tips in booking a budget-friendly trip to another city. Like Washington, DC, you can pretty much travel to any city on even a tight budget, as long as you are strategic with your research and spending. Once it is safer to travel, the world will be your oyster and maybe a trip to Washington, DC will be seen in your near future.

Let’s Talk About GOALS!

Have you ever thought, “oh wouldn’t it be cool to do …”?I know I have! For most of my life, I have consistently thought well, I’d love to do this, this, and this, yet I NEVER got down and in the dirt to actually make it happen until recently. The Covid-19 pandemic has left me with the opportunity to actually turn some of my dreams into a reality. One of the ways that I want to be able to achieve those dreams and live my best life while doing so is by creating my own goals!

My Goals!

Currently, I have quite a bit of things that I would like to achieve and make a reality for myself. I have started some of these goals listed this past year, while others I am just now striving to begin. Personally, it helps me to break down my goals into time frames for things I would like to accomplish within the next few weeks, months, the end of 2020, and into the next year. Below I have listed some of these goals for you to see, as well as some goals I have created in the past and am still working to keep a reality in my daily weekly routine.

Recurring Goals:

  • To cook and try a brand-new recipe each week (being that I am in my apartment or am able to cook for others a recipe of my choice)
  • Post regularly and keep up with posting and sharing content on The Pink Chickadee‘s social media platforms as well as on the blog and to engage with y’all who follow along and support this amazing platform of mine
  • To be able to write my own to-do lists and cross off most if not all of which I have set myself out to achieve in that given day
  • Maintain a physical regime, by walking or running each day in order to stay active, fit, and healthy
  • To travel to new places both near and far
  • Eat breakfast each morning (even if it is small), as I used to really struggle with this simple yet so keen to our health meal
  • To continue to advocate and speak out for the inclusion and wellbeing of others as well as myself
  • Make connections with other influencers and like-minded Lilly lovers and bloggers on my platform
  • To grow more in my Christian faith through praying each day for others and starting a daily devotional
  • Be the best classmate, friend, sister, daughter, blogger, and leader that I know that I am and am capable of doing
  • To be the best student in the classroom and in my leadership positions that I can be and strive to put as much as I can into all that I do
  • Adulting and doing big girl things on my own
  • Know my own capability and self-worth, even if I do not see it everyday within my own self and to encourage others to see their own
  • For the time being, to wear a mask and practice social distancing, in order to not only prevent to spread of Covid-19, but to help keep my friends, family, and the community around me safe and healthy
  • Consistently work on being my best self in all that I do

End of 2020 Goals:

  • Start running and be able to work my way up to run on hilly trails for 20+ minutes without taking a break
  • To expand my platform here on The Pink Chickadee even more than I already have in the past almost 6 months
  • Try some new crafts, such as creating handmade signs among other exciting things
  • Host a giveaway (or a few) on The Pink Chickadee in collaboration with other small businesses or influencers and bloggers
  • To continue to share new and exciting content on this platform
  • Make memories with my friends at college, even if it is in a social distanced manner for the time being, and get creative with how to make them
  • Be able to successfully finish out my final Fall semester as an undergrad (!!!) and most likely one of my most academically intensive one’s
  • Start searching for summer internships and networking with others in my industry, in order to broaden my search as well as potential opportunities
  • Get matching masks and shirts with my Meredith friends
  • Apply to graduate school for Fall 2021
  • Explore new hiking trails and parks in the Raleigh area as well as in North Carolina along with in the Northern Virginia-Washington, DC tristate area
  • Begin scrapbooking memories from past family trips, such as those that we took to Maine
  • *Finally* get my driver’s license
  • Begin a brand-new and super exciting endeavor (more to come on that in the next few weeks!!!)

2021 Goals:

  • Get an internship for Summer 2021
  • Be able to go on a graduation trip hopefully with some college friends
  • Get accepted and commit to attending graduate school in Fall 2021
  • Sign the lease on my first-ever post-grad apartment
  • Host a girl’s weekend at one of my family’s places as well as go on a little trip with my Big and Lil’s
  • Finish up my Honors Thesis and present it at my school and maybe at a research conference as well
  • Take a road trip with one of my best friends to Maine (we were trying to go there this Summer but due to Covid-19 we postponed)
  • Be able to successfully run at least a 5k and maybe even do a local race and/or fundraiser race
  • Visit new places in North Carolina such as Asheville, Charlotte, Boone, Winston Salem, Greenville, Emerald Isle, and Wilmington along with Charlottesville in Virginia
  • Graduate from college with a Bachelor’s of Arts in Mathematics and minors in Data Science, Statistics, and Web Development
  • Attend the Lilly Pulitzer Pink Retreat in Palm Beach, Florida *if not in 2021 then in the next few years*
  • Participate in one of Disney World’s runDisney events at Walt Disney World in Orlando, Florida
  • Go parasailing or on a hot air balloon ride
  • Wherever I go after graduation, continue to maintain connections with each of my friends and family and make time to see them
  • Begin another exciting and brand-new endeavor (hopefully to come in Summer 2021!!)

Tips for Creating Your Own Goals

When it comes to crafting your own goals, it can definitely take some time for them to become a full reality, but little by little it can happen. For example, one of my goals for 2021 is to participate in a runDisney event at Walt Disney World, which would require me to be in shape to run at least a 5k. That being said, I am going to work my endurance up to be able to run at least a mile without taking breaks, two miles, and then three miles. I will start with running on flat streets and then working my way up to running up and down hills. Slowly but surely, I will make it across the finish line at Walt Disney World. Here, I have listed some tips on how you can strive to create and achieve your own goals moving forward!

  • When something comes to mind that you have always wanted to do, then WRITE IT DOWN!!! Whether it be on your phone or in a journal, if you have it in writing saved somewhere, then there is a better chance that you will remember it moving forward.
  • Have a bucket list?! Turn those list items into your own reality. Make that dream trip of yours to Europe a reality or finally go skydiving. While hopping on a plane is clearly not a reality at this moment, use this time to save up for that dream trip or activity of yours while keeping in mind a budget that you would aim to have.
  • Make an effort to try something new every week – whether that be a brand-new recipe or a new restaurant or trail in your city or even a craft. Trying new things is always good for the soul, and having those new things be apart of a goal however big or small it may be!
  • Dedicate some time to spend doing things for yourself. Beyond our goals within our academic and career lives which we should strive to put our time and effort into, we should also make time for our own personal goals. While our academic and career goals may be tied to some of our personal goals, it does not mean that we still cannot take time for ourselves such as to try a new craft, recipe, or a workout regime.
  • Make a to-do list and include aspects of your goals on it. Each and every day, I have my to-do list set on my laptop for what I hop to accomplish for the day. I typically map it out for a given day a few weeks in advance for it to alter a bunch and have many additions and even subtractions until the day arrives. Having items on your list related to your goals, such as taking a walk or reading part of a book you want to finish by the end of the month can help you to get even closer to achieving your goals. My to-do lists helps me check off what I need to do for the day as it pertains to academics and career-wise along with getting closer to my set goals.

Using and writing down goals for things that I want to achieve has really allowed me to use the time that I have in this world to my own benefit. Each of my goals is helping shape me into the best Katie that I can be. In fact, setting goals for yourself will only help you dig deeper into loving and caring for yourself. They say that self love is the best love, and goals can help you do just that. All I got to say is when it comes down to it, be a goal-getter!
