Weekly Menu Round-Up: September 7-11

Funny story: when looking at the dates for this week’s menu round-up, I had to check a few times before realizing that we’re approaching mid-September LOL! I’m very excited, as always, about this week’s menu, as I have some recipes that are staples in my kitchen. I’m definitely keeping it easy and simple, as many of these recipes contain ingredients that I either already have or can easily make. Like most of my platforms, I am currently in the process of transitioning to Fall as I am doing in my kitchen. As all of my Weekly Menu Round-Up’s, I hope that this week’s menu provides y’all with some inspiration for your own kitchens!

Monday – Skillet Gnocchi

In the Summer of 2019, my mother purchased an AMAZING skillet gnocchi from Costco. Flash forward to Summer 2020 and I found a similar skillet gnocchi pack from Costco and knew that I HAD to have it in my own kitchen! I will be whipping up this Costco favorite of mine and serving it with none other than my favorite staple salad of Caesar salad!

Tuesday – Boboli Pizza

My roommate Sophie always jokes that I make pizza ALL THE TIME. True story, too: I would make a pizza at least once a week in our apartment last year when she was around, and probably will when we’re living together in the Spring semester too. Boboli has been my staple brand for pizza crust ever since I was a little girl. For this week’s pizza, I will be adding prosciutto, mozzarella, spinach, minced garlic, and goat cheese. I made a pizza similar to this one in the summer months and I could not resist making it again!

Wednesday – Honey Garlic Glazed Salmon

Love me some salmon! I found this Honey Garlic Glazed Salmon from Delish and knew that I had to try it!!! To serve on the side, I will be making my favorite vegetable *fun fact* aka Brussels sprouts which will also be honey glazed using this recipe from Delish as well along with some mashed potatoes. Definitely some Fall feels on Wednesday!

Thursday – Shrimp Alfredo

Coincidentally, I shared this recipe on my Instagram stories (follow me @_thepinkchickadee) back in the summer months. Shrimp Alfredo is most definitely a favorite easy recipe of mine! I usually make it with egg noodles and add in some shrimp, cherry tomatoes, and maybe even some broccoli. While I typically make my Alfredo with shrimp, one can also make it with chicken or veggie style. The possibilities with this recipe are ENDLESS!

This week’s menu is definitely on the simple side, but it has some timeless dishes that have remained in my kitchen even since my childhood days. I have always found the kitchen to be a special place to try brand-new and classic recipes, making it such a special place to be. Have a great week y’all <3

8/24-8/28 Weekly Menu Round-Up

The other day when I was planning out this week’s menu, I shared that I think planning it has been the highlight of 2020. Ever since I was younger, I have become such a planner. That being said, I LOVE planning Weekly Menu’s and am really excited for this week’s. Just like last week’s, I have TONS of one pan/Crockpot recipes, as attending my Senior year mostly from Zoom is pretty hectic. Here’s to another crazy yet exciting *mainly virtual* week of Senior year!

Monday: Manicotti

Love me some Manicotti!!! Manicotti has been one of my favorite pasta dishes since I was younger. Last summer, I made a Crockpot Manicotti recipe that was AMAZING, however, it took two hours just to prep. That being said, I found this recipe from allrecipes that takes a lot less time to prep yet still has the same results! Similar to last week’s ravioli, I will be serving my Manicotti with some Caesar salad and Texas toast.

Tuesday: Slow Cooker Maple Salmon

Once I got to Meredith, my mom and I hit up a local Costco for some salmon, shrimp, and tilapia as we are fish lovers. As I have a ton of salmon in my freezer, I figured I would put it to some good use and try a super delicious looking Slow Cooker Maple Salmon from Get Crocked. I will be serving it with my favorite Thanksgiving dish that I make ALL the time – green bean casserole – along with some roasted broccoli.

Wednesday: Old Bay Shrimp

Ever since I was younger, I was OBSESSED with Old Bay Shrimp as well as *of course* all things Old Bay! I mean, I did grow up going to see my family in Annapolis, Maryland and visit the beaches in Delaware where my family has a beach house, which is where Old Bay seasoning flourishes. To complement the Old Bay Shrimp, I will be serving it with a baked potato and a Garlicky and Cheesy Cauliflower Broccoli Bake which looks AMAZING from Diethood.

Thursday: Popcorn Shrimp

Similarly to the Old Bay Shrimp, I have also always been obsessed with popcorn shrimp as I grew up eating it from the local Dairy Queen! Instead of making popcorn shrimp from scratch, I usually purchase it pre-made from Seapak. It definitely tastes similar to my favorite childhood dish from Dairy Queen. To serve alongside my popcorn shrimp, I will be having yet another baked potato as well as roasted carrots.

Friday: Crockpot Shrimp & Grits

Like salmon, I also have A TON of shrimp, so why not put it to some good use?! That being said, I will be testing out an easy Crockpot Shrimp & Grits recipe from Tammilee Tips. I will be serving it with roasted cherry tomatoes to celebrate the end of another long week!

I am MOST definitely excited for this week’s menu round-up, and I hope y’all are too! One of the biggest incentives for myself throughout crazy long weeks is to have an AMAZING dinner at the end of the day. It *for sure* keeps me going through it all, especially during these oh so crazy times.

Weekly Menu Round-Up: August 16-21

Woohoo!! It’s time to get back on the grind! Getting back on the grind also means that it is time for another Weekly Menu Round-Up. This week is my first week of classes as a college Senior, which leaves for tons of menus to prepare for the upcoming week. Since my week is kind of busy with meetings and virtual events amongst classes, I have a few dutch oven/Crockpot meals included that last for a few days, which make for EXCELLENT budget-friendly meals throughout any busy week. Here’s to a great Senior year with some amazing meals to fuel to start of it!

Sunday: Flatbread pizza

I have had some super delicious flatbread for pizza from Trader Joe’s in my fridge for the past few days. Today, I am deciding to use some of the mozzarella, prosciutto, garlic, and spinach in my fridge to whip up a mighty pizza to celebrate my last eve of the first day of classes. This meal is easy and all available right in my kitchen as we speak!

Monday: Dutch Oven Ravioli Bake

Last week, I purchased some Maine Lobster Ravioli from Costco. I have ALWAYS been one to spice up my recipes. So, I looked up a dutch oven ravioli bake via my best friend Google and found one. I cannot wait to try this easy and delicious looking recipe linked here. Additionally, I will be serving it with Caesar salad and Texas toast. Luckily, since it is a dutch oven recipe, I can have the leftovers for lunch and dinner on Tuesday!!

Wednesday: Slow Cooker Vegan Pinto Bean Enchiladas

I don’t know about you, but I am a sucker for Mexican food!!! Yet, I literally NEVER know how to cook Mexican food at home. Fortunately, that is all about to change as I will be giving it a try this week with some crockpot vegan enchiladas that I found via *of course* Google linked here. Being someone who is super picky about meat, I typically cook on a pescatarian diet when at home. That means that I typically try vegan/vegetarian options when cooking which I LOVE doing!! Like Monday’s Ravioli Bake, I will also be enjoying my enchiladas with some tortilla chips into Thursday for lunch.

Thursday: Potstickers & Roasted Brussels Sprouts

To keep it easy for Friday-eve, I will be heating up some pre-made shrimp potstickers from Trader Joe’s. Since I love myself some good olde veggies, I will be adding my favorite recipe of roasted Brussels sprouts into the mix along with some soy sauce on the side for dipping.

Friday: Lobster Bisque & Crostini’s

Similar to Mexican food, I am most definitely a sucker for some soup! I guess it may be because I have New Jersey roots LOL!!! Since getting my apartment, I have been dying to try Wegman’s branded Lobster bisque soup. So, I am going to FINALLY try it this Friday and serve it with some roasted mozzarella crostini’s and some roasted mushrooms. Most importantly, Friday’s dinner will NOT be complete without some wine to wind down after my first week of Senior year!

Hopefully I can provide you with some inspiration for some practical, yet delicious recipes to make in your own kitchen during a busy week. Next week, I will excitedly be sharing another Weekly Menu Round-Up, as I will be regularly cooking in my kitchen each day. Here’s to making many more memories in the kitchen!!!

How To Craft A Weekly Menu On A Budget

From cooking to baking, the possibilities in the kitchen are most definitely ENDLESS! While it is extremely exciting to start cooking in the kitchen, it definitely comes at a cost. In order to help me stay on a budget, I create weekly menus that include ALL of the recipes that I have for a given week. That way, when I head on over to the grocery store, I know exactly what I am going to purchase for that week and it helps me steer away from items that I do not need. Consequentially, I have successfully been able to keep my grocery runs to once a week, which also helps me save money in the long run. In this blog post, I will be sharing how YOU can create your own weekly menu while maintaining your budget.

Use Pinterest, Blogs, & Cookbooks!

Have a preference for vegetarian, keto, gluten-free, or vegan recipes?! Whatever your recipe preferences may be, get on Pinterest and/or research some blogs and cookbooks that have recipes to your liking! In doing so, you can see what recipes are up to par with your cooking ability as well as your budget. In finding budget-friendly recipes, my biggest piece of advice would be to make sure that the majority of ingredients in the recipe you can either find in your pantry already or get pretty cheaply at the grocery store. For instance, you may not want to try a recipe that has you buy all of these ingredients that you do not already have in your pantry such as Worcester sauce and Nutmeg if you are not going to use them for something else. That being said, there are plenty of other recipes out there – even for the same dish – and it is much more worthwhile to spend your money on items that you will use to the fullest rather than dump. Finding inspiration for recipes is always an effective way to garner inspiration for what will be cooking in your kitchen!

Have A Place To Store Your Recipes Of Interest

Once you find a recipe that you would like to try, then save it to your Pinterest board, add a sticky note in a cookbook, or create a document where you can link recipes found directly from blogs. I have also created a Google Document where my friends and followers can all share recipes with one another and gather inspiration. If you would like to join, then fill out the form here! Having a place to store all of your recipes that you want to try will make it easier for you to find them, as you’re crafting your weekly menus. When you have found a plethora of recipes that you would like to try, then the opportunities to spice up your kitchen will be endless in a convenient way!

Plan Your Menu Based On What’s Going On Each Day

I cannot say this ENOUGH: plan your weekly menu based on what’s going on each day of the week. If your Monday evening is busy with meetings, then definitely plan for something simple that night or cook something the weekend before. The same idea goes for any other day of the week. Additionally, it is important to make note of days that you plan to go out to eat at restaurants and/or order takeout. In my family, we usually order takeout on Friday’s, so mark those days as having takeout for dinner. Similarly, if you plan to get breakfast, lunch, or dinner with some friends, then mark those on your menu calendar too. That way, when you plan your menu based on each day, you will be better set to create a menu that meets your day’s needs as well as your budget’s.

Shop Based On What’s On Sale!

What time is it?! It’s time to sign up for your favorite grocery stores’ rewards programs! Lucky for you, each of your favorite grocery stores will have coupons on items that are on sale for that week. Also, most grocery stores conveniently have apps that you can use to scan in these rewards when you go shopping and see what’s on sale before you go. Stores that have these reward program apps include Target, Harris Teeter, Food Lion, and Wegman’s. Excitedly enough, Instacart also has exclusive coupons to the app, which allows many of us who feel nervous about going grocery shopping in person to steal get our deals from our couch. That being said, my biggest suggestion would be to look at the items that your favorite grocery store is having a good deal on that week. If you see something that you enjoy that is on sale, then get it that week to save yourself some cash in the long run! You may even want to stock up if it will save you a lot of money in the long run to do so! Like clothing stores, grocery stores have sales too, however, they can be a lot more challenging to find – you just have to do your research.

Cook Ahead!

I have ALWAYS cooked more for dinner, so that I could just heat up something simple for lunch. I am also one that gets really hungry in between classes, so having something quick to heat up is great for me. Meal prep is also a great thing to do for dinners and/or lunches throughout the week. Not only does cooking ahead save you some time in the long run, but it also saves you money!

Get Groceries One Day a Week

Typically, I plan out my weekly menus the day of or two days before I head to the grocery store. Usually, I designate Sunday as my groceries day. That way, I know to have my Weekly Menu and Grocery List ready to go to get what I need for the week. In addition, I will normally know what meals I will be cooking for that week based on what is going on during the week – whether it be dinners out with friends, a gathering at someone’s apartment, or I have a hectic schedule that calls for some meal prepping. Whatever the case may be, having my grocery list set in stone and ready to go every Sunday helps me to get what I need to conquer my week and budget.

As someone who LOVES to cook while maintaining a budget, I hope that these tips will serve you well in the kitchen. Most importantly, cook meals that YOU and your roommates will each enjoy.
